Multi-tasking + mega desk (Office fans?) + make this!

After Jake left for work, I hit up the grocery store. I took my breakfast with me – multi-tasking at its finest, huh? Lucky’s has double the ads on Wednesdays, so I think I’m going to start doing my shopping on Wednesdays…at least the majority of it. We will see how that goes.

I tried something new this week – I didn’t go to the store with a list. I wrote down things we needed, but I didn’t plan our meals. That was weird for me! Have I mentioned I’m extremely Type-A? I looked over the ads and went by the things that were on sale. From that, I planned out meal ideas in my head. I went to the store right when it opening (7AM), so there wasn’t anyone else there, which was nice. I really had time to think and look around. It didn’t take that long, either. About 30ish minutes!

I got a ton of work finished yesterday!! I needed a day like that. I took a break from working and pressed the tofu I was going to eat for lunch. I’m trying to limit my soy intake after taking my Food Sensitivity test, but I still love tofu. I’m going to try it this week and see how I do. Until I started eating tofu more often, I didn’t realize you needed to press it before cooking it. I just use books right now. They make a tofu press, but books work just fine! That ring is from the bowl I set in-between the books and the tofu. My bad.

I tossed my tofu with this seasoning (thanks, Momma!) and some liquid aminos.

Then put everything in the AirFryer. Oh my gosh. This was AMAZING. It was the perfect amount of crispy.

I also sautéed some veggies and had Nut Thins. YUM.

I worked again after lunch and then took a dessert break – it looks weird, but it’s a protein muffin and Chocolate PB2 (I put too much water, but it ended up being delicious). It was just what I needed. I have a huge sweet-tooth.

For dinner, we had a shrimp Caesar pasta salad. I used to get something similar at Cheddar’s and I always loved the mixture of pasta and lettuce. I used these noodles, which are my new favorites. They’re SO good. I got mine at Lucky’s, but I’ve also ordered them off Amazon before. Lucky’s had them on sale, so I stocked up. Last night was my first time having the penne and it was super good. The salad is supposed to be cold, so I prepped everything yesterday afternoon and let it chill in the fridge.

I made shrimp to go on the salad, so of course I needed to use my Primal Palate seasoning. I told you I’m obsessed…I can’t help it. It’s just that good.

Since I changed to a vegetarian diet, I’ve been tracking macros to make sure I’m getting enough protein. I like to put all my meals in at the beginning of the day. It helps the planner in me. I really enjoy this kind of stuff, so once I graduate (if that ever happens), I’d love to spend more time learning about macros and nutrition.

My knee has been bothering me whenever I sit for an extended period of time, so I used my breakfast tray for breakfast in bed to make a standing desk. Lu wanted to sit behind me in the chair I normally sit in to work. I kept calling this area my mega-desk because I had Jake’s laptop out, too. And I’ve been watching The Office and Dwight makes a mega-desk from Jim and Pam’s desks. Any Office fans out there?

Jake and I polished off our homemade salsa last night. I need to make more…also, these blue corn chips from Lucky’s are delicious.

Jake and I sat on the couch looking at something and he decided he wanted to take a little nap. I didn’t want to nap, but I also didn’t want to move, so I played some Spider Solitaire while he snoozed. I forgot how much I like this game!

Before dinner, I hopped in the tub for an Epsom salt soak. I’m SORE from that workout I shared on Tuesday. I felt like I was being watched. Sneaky, sneaky girl.

I’m STILL trying to finish this book. I love it, I just haven’t had much time to read for fun. I need to finish it. It’s informative and has some awesome insights into training.

I mixed everything I had prepped (shrimp, pasta) and lettuce and got this deliciousness. I need to remember this meal. I topped everything with goat cheese, too.

It was storming like crazy last night. I sat and listened to the rain while enjoying our home. We are getting ready to do some remodeling, which I’m super excited about, but I was feeling extra thankful for a cozy home last night.

I have a meeting today about one of my chapters. Fingers crossed it goes well. This SHOULD be the final meeting over this chapter…I sure hope it is.
Jake and I are both in the Mug Club at Springfield Brewing Company. We love good beer and they have some of our favorites! Yeast is a food trigger for me, but if I just have a little bit, it’s not too bad. I love craft beer, so I can’t give it up completely. Each Mug Club member has a Mug Day. We aren’t sure what all it entails, but today is mine! I’m excited. I’ll let you know all about it tomorrow!
I can’t believe it’s Thursday…this week has flown. Happy Friday Eve, friends!
