One year ago TODAY, a lot of amazing things happened – Jake and John finished their hundred mile run and became Leadmen, and Jake proposed! That day was full of every emotion on the planet.
We had a wonderful, low-key weekend. Our next few get kind of crazy, then races start, and I graduate, so I have a feeling this fall and winter are going to FLY by.
We ran together Friday morning then had smoothies before Jake left for work. I finished up some edits and then made lunch. I had zoodles (zucchini noodles) and shrimp. It was SO good. I just cook my zoodles with butter or olive oil and add whatever seasoning sounds good – always garlic and sometimes that Primal Palate Seafood seasoning I’m always talking about. That’s what I did on Friday!
I am obsessed with our diffuser and diffuse oils ALL the time. I love vanilla and lavender, so I got some big bottles of each. The vanilla is amazing. I also added a few drops to my Epsom salt soak the other day – it smelled SO good.
Lu loves to sit right here and “hunt”. She watches for squirrels, birds, bugs…anything that comes into her yard.
Jake left town Friday night to get a long run in Saturday morning on the Berryman Trail, so I relaxed all night and did some carbo-loading at home. I had this for the first time – it was super good! I ate the entire container, which was two servings. It cooks pretty quickly. The container said 6 minutes, but it was more like 12 for me. Still super simple! I also got a wild mushroom one to try. Jake is obsessed with mushrooms, so I saved that one for when he is home with me and we can share it.
I topped the pasta with a balsamic drizzle and had a piece of garlic toast and a beer with it. The perfect way to gear up for a long trail run!
Long run time! I always set everything out the night before. Jake is the worst about eating half a bag of Skratch chews and then opening a new one. I end up taking his half eaten bags on almost every single one of my long runs. It works out, I guess! He opened this last package all weird, though. They kept falling out. I forgive you, Jacob Ray! ; )
I slept in a little on Saturday, so I left the house about 7:40 to head to Two Rivers. I enjoyed my coffee on the drive down.
I mean, how can you not love this place? We will be hanging out here all weekend over Labor Day for the Single Track Mind festival. It’s a BLAST. Check it out
HERE. Come run or ride with us! I’m leading a group trail run Friday night, but there are also some races Saturday morning. There’a 5k and a 15k. Jake makes the courses and they’re always super fun. There’s live music and all kinds of good food and beer.
I have been so excited to try this new Gu flavor. It was sunny, but not too hot. I loved it.
Since I’m training for a road marathon, I haven’t been running a ton of trail, so I took things easy. I don’t need a sprained ankle right now, but man it felt SO good to be on trail again. After this full, I’m going to do some trail races. I’ve missed it!
Yup. This Gu was DELICIOUS. It tasted like vanilla frosting.

I got 12 easy miles in at an 11:27. I never felt like I was pushing too hard, which was good. I was supposed to do an aerobic run, so this was a littler harder than what my plan called for, but I was enjoying myself.
I chugged a Skratch recovery shake and came home to make lunch. If you’re meat-free, try this stuff. It is GOOD.
I made the rest of my zucchini noodles and topped them with the veggie beef. So. Good.
I was worn out after my run. I knocked out a couple of things for chapter 3, then Lu and I took a nap while we waited for Jake to get home. He ran 25 miles Saturday morning on the Berryman Trail.
Lu moved to her favorite sport to nap.
Jake got home and told me all about his run. He crushed it! I’m so proud of him and his dedication to training. He has another hundred coming up. I’ll be crewing for him again – I keep joking with him and asking what he’s going to give me when he finishes this time. Ya know, since he proposed last time? ; ) You can see the video HERE. We went to a new-ish place here in town for my sister’s birthday dinner. It’s called Karai Ramen and Handroll. When we got there, my family had already ordered some delicious appetizers. From left to right: tofu, chicken, and baked avocado. The tofu was definitely my favorite. It was SO good.
I’m not a huge ramen fan, so I got sushi. It was pretty good! Not my favorite, but not bad!
This was Jake’s ramen – he got the veggie ramen. It was pretty tasty!
After dinner, Piper, my sister, wanted froyo. I was stuffed, but I can’t turn down dessert. I sampled three flavors – wedding cake, brownie batter, and coffee. The wedding cake was hands down my favorite.
We were both pretty worn out, so we bailed on meeting some friends (thanks for understanding us, guys!) and went home to get into sweats and sit on the couch. We watched an episode of Gilmore Girls and then crawled into bed. This is 30… ; )
Jake got up early Sunday to get his 12-miler in while I slept in. I’m not going to lie, I thoroughly enjoyed sleeping in yesterday. I didn’t get out of bed until after 8!! It was glorious. But I was kind of sleepy the rest of the day. Oh well! Sometimes we need a little extra sleep. I’m someone who doesn’t function well without sleep. I can go 2 or 3 days with little sleep, but after that I get run down and usually end up sick. I’ve been taking advantage of sleeping in while I can. I don’t know what job I’ll end up with, so I’m living it up right now.
On Thursday, Jake told me that he wanted to cook me breakfast Sunday morning. So, after his run, he went to the store and got supplies. Check out the awesome meal he cooked for us! We had eggs, bacon, salmon sausage, sweet potato hash browns, mushrooms and spinach, and avocado. It was SO good. And SO filling. I couldn’t eat everything.
I walked into our room and saw Lu pouting. Turns out she couldn’t get her bone unstuck – see it? She was pretty pleased with me after I helped her. She also got a little hair trim after this…poor girl. The hair on her face grows SO fast.
Overnight proats for breakfast this week! I call them proats because I add protein powder to them. Jake and I will share one of these jars. I’m going to make the rest of them later!
Jake and I went to check on his parents’ dogs Sunday afternoon, so we grabbed lunch on the way to their house. We both got cookies and 100% ate them on the drive over…
I got some cuddles from this ornery pup.

Our first unofficial date included tequila and JJ Grey and Mofro. So, while we were cooking dinner last night, we listened to the same amazing tunes and sipped on homemade mango margaritas. I LOVE margaritas, but they always upset my stomach because they’re so sweet. Making them at home helps with that! These had tequila, a little Gran Gala, orange juice, frozen mangoes, and ice. That’s it! They’re were delicious.
Jake made tacos and I had nachos. That veggie ground beef was perfect on these.
Mmmm.

Jake proposed ONE year ago TODAY! He also finished his hundred mile run on the same day. I’m so glad our families were there to see this…and record it! After being up for over 24 hours, these recordings help jog my memory. I was SO proud of Jake (and his Dad, John) as they crossed that finish line. Jake said he slouched over to get my ring out of his pocket, but I thought he was hurt. I kept trying to get him to go to the medical tent. HA!
Cynthia, John’s wife, paced John for the last portion of the hundred. I met all of them as they were coming into the finish line. I started crying as soon as I saw them in the distance. This was seriously one of the best days.
Now, after talking about Jake finishing a HUNDRED, we can talk about my training last week…HA! ; )
Monday: 3 WU, 6x (400m uphill @ 10k, 400m downhill @MP, 60 sec rest), 2 CD = 8 @ 9:35
Tuesday: Jake’s Birthday and my body was tired, so I took an unscheduled rest day
Wednesday: 2 easy, 4 HMP, 2 easy = 8 @ 8:27
Thursday: Lifting circuit
Friday: 5 @ 9:17
Saturday: 12 beautiful trail miles!!
Sunday: Rest day!
I’m officially starting Week 10 today, so I’m halfway through my training plan! I’m following a 20-week plan and so far, I’m loving it. I’ve got a workout today, so I’m going to go knock that out. Being a girl sucks sometimes, so I’m waiting for my Tylenol to kick in. Eye-roll.
I was feeling like I needed some guidance with my macros, so I asked Quincey at iHeart Macros to do an overall count for me – today is day one of following her macros. I’m excited! It wasn’t that far off from what I was doing, so that made me feel good, but she definitely knows WAY more than I do. After my training, I’d love to do one of her coaching plans. She does macro counting and workout plans for clients. She’s pretty dang cool!
