Weekend Wrap-up!

We had a great weekend that FLEW by. I spent most of Friday on the couch when I got home from my run. I didn’t have much of an appetite, but I made myself eat some of the overnight oats we had been having all week. I knew I needed some food in my system. I was worn out, so it was nice to come home and have them already made. After I ate, I took about an hour long nap, then started on dissertation work. I had a meeting in the afternoon, so I worked until it was time for that. I’m in crunch mode right now –  a month until I defend – so things are hectic!

I took my heart rate monitor off at mile 14 of my 17. It was killing me. I got home and saw these new chafe marks. Ugh. Not fun! One day, I will find a solution.

My Mom sent me this and it made me laugh. Any other Fireball lovers out there?

Like I said, I didn’t really have much of an appetite, but I knew I needed food, so I had a leftover shrimp fajita for lunch around 2PM. They were pretty good!

I finally started to get an appetite around 4, so I had some crackers and hummus.

We ran some errands Friday evening, then grabbed an appetizer at The Pitch – these fried brussels are our favorite.

Then we grabbed dinner at Farmer’s Gastropub. I ordered their veggie burger and a side salad, but I wasn’t hungry at all, so I had about two bites of it.

I finally got an appetite about 8PM, so I finished up my leftovers. SO yummy.

Jake was up crazy early Saturday morning (3AM) to get his 30 mile run finished early so we could go to the lake. I slept in until about 6 and then got up to do my recovery miles. I am LOVING the new Altra Paradigms. They’re so comfortable.

I surprised at how good I felt after my 17 miler the day before! The longest I’d ever gone was 15.5, so 17 was a milestone for me. The first mile of my recovery run felt hard, but once I was warmed up, I felt great! I did 3 on my own and then picked up Lu for the last 2.

I was STARVING after my run Saturday, so I made a huge plate of eggs and veggies.

This made me laugh. One day while I was working, the girls were SO quiet and I couldn’t find them. I searched the house and finally found them in their kennels. Each day gets easier, but we all miss our Aspey girl. These two are the best.

Jake got home from his run Saturday. He’s seriously amazing. He ran part of his run with some other guys, but his last 10 miles were on his own…AND he got caught in a storm! But he knocked it out and was ready to hang out with friends at the lake all day.

After spending all day on the water, we grabbed dinner at Coyote’s. Jake and I shared some delicious seafood.

After dinner, we took the Planks’ boat out for a night cruise. The moon was incredible. It was so bright, you could see across the entire lake.

We went on a golf cart ride then sat around relaxing.

Jake and I grabbed lunch at Flat Creek on our way home. We shared wings, a salad, and crab legs. Everything was delicious!

We came home to these awesome pillows on our front porch! I have the best in-laws. Thank you, Jeff and Penny!!! We LOVE them. Lu loved them, too. She was all tuckered out after staying with my Grandma Saturday and Sunday. She had a blast and slept most of the day after we picked me up. Thank you, Grandma!!

When we got home, Jake took a little nap and then headed out for a 12 mile run. I started on meal prep and laundry. We have a crazy busy week/weekend, so it’s kind of a “fend for yourself” type of thing. I cooked everything, that way we can juts grab and go. I plan on doing a lot of smoothies for dinner, too.

For lunches this week, Jake is having BBQ chicken, mixed veggies, and a couple pieces of chicken sausage, an orange, grapes, a hard-boiled egg, cucumbers and hummus, and yogurt. Here’s his BBQ chicken before it was cooked.

I made proats (overnight protein oats) for us again. I just realized you can see Jake sleeping in the lefthand side of this picture. HAHA!

I cooked up 2 pounds of Mahi-mahi and another huge tuna steak. This all was topped with Primal Palate’s Seafood seasoning.

I also roasted some butternut squash noodles. These are topped with olive oil and Everything But The Bagel seasoning.

I’m not a huge cucumber fan, but Jake is, so I sliced up a bunch for his lunches to eat with that homemade hummus I made last week.

Jake’s lunches all ready to go. We used to have 5 matching pieces of containers. Some of them got broken, so now we mix and match. I need to get a matching set again. I miss everything matching. Is that weird? (I may or may not have ordered some as I was typing this…do I have a problem?)

I roasted edamame and cauliflower, too. The cauliflower was roasted in liquid aminos, garlic, and black pepper, and edamame was roasted with olive oil, salt, and lemon juice.

I’m sorry for the language, but THIS. I saw this on Instagram and I couldn’t pass it up. Nothing makes me angrier than people, male or female, being scared to run (or ride) because of stupid people. People need to stop being so sucky.

Okay, how awesome is this??? This is the running retreat I’m going to in May!! I’m already SO pumped. Trail Sisters had one last weekend and it looked incredible.

Monday: 3 mile WU, 5x 1,200 at 10k with 3 min job in-between, 2 mile CD = 10 @ 8:32
Tuesday: Lifting
Wednesday: 6 @ 9
Thursday: Arm circuit
Friday: 3 mile WU, 3x (2 @ MP, 2 easy), 2 mile CD = 17 @ 8:53
Saturday: 5 @ 9:15
Sunday: REST!
So, like I said, this week is kind of crazy. One of us has something going on just about every night. We have an event this weekend – Singletrack Mind – check it out HERE. It’s an absolute BLAST. Jake makes all the running courses, so he will be out marking them and helping with other various stuff. I’m leading a trail run Friday night (5PM), nothing crazy, just 3 miles, so come join me! There’s also a 5k and a 15k Saturday morning as well as tons of mountain bike races, which are super fun to watch. There’s also a concert Saturday – The Mixtapes are playing (they’re my favorite).
I’m off to get some work finished and then get a run in – I am feeling tired, but overall pretty fresh this morning, which is surprising. I definitely thought I’d feel worse after my 17-miler. We will see how my run goes today! Poor Lu broke off one of her front teeth, so I’m taking her to the vet today to get it checked out.

    So this is probably weird … but I can’t stand raw cucumbers … BUT if you give me a pickle I probably won’t turn it away.
    Looks like you had a great weekend. Do a lot of your friends have places on the lake to stay at? Do you guys usually just stay with them or do you have a preferred resort or hotel you like to stay at while at the Lake of the Ozarks?

      I’m the same way!! I LOVE pickles, but don’t love cucumbers. At all. Too funny!
      Luckily, a lot of our friends have lake houses! We were at Table Rock lake last weekend, in Branson, MO. I have only been to Lake of the Ozarks once and we didn’t stay, so I’m not very familiar with it. Do you go there very often??
