I’ve been trying to do a better job of eating right after I finish a hard run. I know how important it is to eat right after to give our bodies something to rebuild with – I’m not always hungry right after a hard run, but I’ll at least try to drink a recovery shake. Yesterday, we both had waffles and an egg and veggie scramble.
I worked most of the morning on grading, then took a lunch break. I am officially obsessed with that Everything but the Bagel seasoning from Trader Joe’s. It’s SO good on veggies. You can order it online if you don’t have a Trader Joe’s. I think it’s probably my favorite seasoning for veggies. That’s all I put on mine and they’re amazing.

These are addicting. I got them from Sam’s. I love all the different flavors happening here. I haven’t always been a coconut fan, but it has really grown on me.
I caught Lu mid-yawn. Or she’s laughing.
We took a break from work and laid on the couch for about 30 minutes. She was partly laying on my face, so I couldn’t move. I didn’t hate it.
I shared the recipe below, but I made one of my favorite casseroles last night. I changed it up a little bit this time, so it’s just veggies, but that’s what I love about this – you can literally add anything to it! It’s a spaghetti squash casserole and it’s SO good and SO easy! And yeah, I totally topped it with ALL of the cheese. WIn-win. It freezes really well, too, so I made enough for us to eat for two nights and then freeze a night’s worth.

Here’s the recipe and the nutrition information. I just put everything listed here (half the cheese) into a big bowl, add garlic powder and basil seasoning, and mix it all together before putting it into baking dishes. I topped the baking dishes with the remaining cheese and cooked it at 375 for 40 minutes. That’s it! This is also really good with ground turkey sausage in it, but you can add ANYTHING! Don’t forget the eggs – with them and the cheese, everything stick together better.

I’ve got some work to do on an article I’m co-authoring and I need to start on my presentation for my defense. I also need to get a little workout in and maybe go on a bike ride! We will see how the day goes. I have my longest run ever this weekend – 22 miles, so I’m taking it easy this week. I’m excited to knock out that mileage and see how I feel. I have a little over a month until my marathon.
