This recipe is delicious + headsets + weekend plans!

Breakfast after our runs yesterday – turkey bacon, eggs, and waffles. I cannot stop eating these waffles. They’re the blueberry Van’s waffles and they’re amazing. 
I am sore from my workout on Wednesday, so I’ve been soaking a lot. I want to feel good for my long run Saturday! I hopped in the tub and sipped on coffee while I soaked yesterday. 
Last day of this lunch – salmon topped with homemade ranch and veggies. 
I think this is one of my favorite Chobani yogurts. I love the coffee one, but I can never find it. 
I had a meeting on my computer yesterday and for the life of me, I couldn’t find a pair of old headphones. Jake and I both have the new iPhone, so we have new headphones and the plug-in is different. I haven’t gotten an adapter yet. Sooo, I busted out my trusty headset from when I would log into my classes on campus from a distance. So many great memories… ; )
Jordan is the BEST! She had this sent to me for my birthday! That charm goes onto your shoe lace! You can bet this is going on my shoe before my run tomorrow! Thank you, girlfriend! <3 
I am not a huge soda fan, but Zevias are delicious. I have them as a treat during the day and I really like the Cola and Lemon Lime. YUM. 
I am a sucker for cereal. I saw this at the grocery store and had to try it. Plus, it was on sale – win-win. It’s made with beans!
Can you tell my sweet tooth was guiding my grocery decisions? YUM. All of these went straight into the freezer. 
This cereal is filling! I measured out a serving and then only ate half because I got full. That NEVER happens to me with cereal. I have to measure it out because I could eat the whole box. It’s true. It’s happened. I really like this new kind!
We were having enchiladas for dinner, so I just threw a bunch of stuff together for the filling – half an onion, a can of diced tomatoes, a bag of frozen corn, a can of black beans, and a can of green chilis, cumin, chili powder, and cayenne pepper. I cooked everything in a pan and then let it cool off before filling 10 tortillas with it. 
I didn’t want to get pre-made enchilada sauce and I didn’t feel like making my own, so I literally mixed some sour cream, Cholula, and water together to make a sauce. Guys, it was SUPER good! I couldn’t believe it. Then, of course, I topped everything with cheese. I try to steer clear of a lot of dairy, but it hasn’t been bothering my stomach this week (probably because I don’t normally eat a ton). I’m slowly adding it back in and this was the perfect way to do so! I cooked this at 375 for 35 minutes. That’s it!

I failed to get pictures, but my birth mom, Dawn, had some girls over last night and it was a blast! I went over there after dinner and it was so fun to catch up with everyone. Fridays are my off day (during the week) from running, so I took advantage of that and slept in. Lu and I cuddled for awhile before I finally got out of bed, too. I will do some stretching and foam rolling later, but I’m still sore from Wednesday, so I’m going to take it easy. I have a meeting today about my defense, which is next week (eek!), and then I’m off to celebrate one of my friend’s birthdays AND her bachelorette party! I won’t be able to stay out very late since I have my long run tomorrow, but I wouldn’t miss celebrating with her! Jake and I both have long runs Saturday – 22 for me and 15 for him, then that’s it! We will take the rest of the weekend easy. I can’t wait.
