I put my run off yesterday until about 9:30. It was starting to get warm when I started, so I was regretting that decision, then it got cloudy and really cooled off – it was perfect! I had a 3 mile warm-up, 2x 1 mile at 8:15, 800m at 7:20 with a 2 minute recovery in-between, and a 2 mile cool-down. I felt a little sluggish, so I’m hoping my run today feels better. I ended with 8 miles for the day. This training cycle, I’ve only been running 4 days a week after. I wanted to see how my hamstring would hold up. So far, so good! After my race, I want to bump up to running 5 days a week and see how it does.

I had a waffle before I ran and then came home to egg and veggie casserole and coffee. I still love Sriracha, but we have been using this other hot sauce lately and I’m obsessed. Valentina’s, maybe? I’ll have to check later for sure. It’s SO good.
8 years ago yesterday I did my first ever double digit run! I remember the run very clearly.
Hahaha, this also popped up…if only I could tell my 19 year old self that I’d one day be regularly getting up at 4AM to run. And that I love it.
Also, 6:40? Come on, 19 year old Chelsea. Ya big baby. I’m hoping I was unsure about that time of the morning because of how late it was when I posted this (12:34AM)…otherwise, I’m embarrassed by my 19 year old self. Remember when Facebook status updates said, “Chelsea is…..”? That was a LONG time ago!
This sleepy girl was tired of me being on my computer all day. My first official day back after defending my dissertation and I still spent most of the day on the computer – ha! I was getting caught up on grading and emails.
Lunch – cod, brown rice, and veggies. Someone asked me how I keep my fish from getting dry. I undercook it! Any time I prep a lot of fish, I always undercook it because I heat it up and that cooks it a little more. Plus, I never like my fish well done anyway, so it works out! It definitely keeps your fish from getting dry. More Valentina’s (or whatever it’s called). Definitely not as pretty as Sriracha, but man, it sure is tasty.
This yogurt flavor is delicious, too. It’s a chocolate and cream blend and it has chunks of chocolate chips in it. Mmm. We only have one muffin left – I need to bake some more! They’re so good.
Bittersweet – my study is officially closed. I’m going to finish a couple of edits today and then hopefully submit everything! I may need to send it to the head of my committee to have her look over edits, but that’s it! I already know I’m going to cry when I submit it. It’s just part of this process for me. Is that weird?
Dinner last night was SO good. I used butternut squash rigatoni for the first time, and holy cow. We will definitely be buying that again! It’s so simple. You just sautè it in oil for 5-7 minutes – that’s it! I used some of the homemade cashew pesto I had frozen a few weeks ago as the sauce and it was delicious. I topped the butternut squash with scallops, which I seasoned with my favorite Primal Palate seafood seasoning. We also had salad and garlic bread. It was amazing.
I already want that rigatoni again…and it’s 6:30 in the morning.
I did a spray tan last night and was hot, but still wanted to cuddle. Improvising. ; )
These pictures popped up on Timehop today – my heart. These two sure loved each other. I miss Aspen. Her cuddles were the best.
I’ve got a 9 mile run to knock out later, then it’s dissertation work and cleaning the house. While I’m still spending some time on my computer, I definitely feel a million times less stressed. It’s kind of an odd feeling. I feel like there are things I HAVE to get done, but in reality, I’m all caught up. There’s nothing I can really work ahead on either. It’s strange! I do want to start submitting articles to research journals, so I’ll probably start on that next week. I’m going to go to the library to get some books to read for FUN!!! Any suggestions?

Oh, Alyssa! Thank you for your kind words about Aspen. They seriously made my day. I love knowing that other people cared about her! Thank you, thank you! We have talked about getting another dog, we just don’t have a timeline! We’d love to rescue, so we will definitely be on the lookout. I know Lu would love it. She misses having a buddy.
