Weekend Wrap-up: Part 2 + try these sweet potato nachos!

Okay, let’s pick up on Sunday! Jake’s race didn’t start until 9, so we got to sleep in a little. It was COLD. I was pretty thankful I wasn’t racing. We had breakfast, packed up all of our stuff, and headed to the race start.
Look at all those mountain bikers! Jake raced the 20-miler. His back was still really bothering him, so he planned to just go out and enjoy the trails.
After Jake started, I went back to the car and bundled up with my coffee.
My Dad sent me this picture of Lulu relaxing at their house. My grandparents from Florida are here visiting and will be at my graduation, so Lu was loving that.
I did not feel like running on Sunday. I wanted to do a little shake out run, but it was cold out and I honestly just wasn’t feeling it. I got all bundled and started a run, but my knee was sore right away, so I called it quits and got back into the car to relax and wait for Jake. I decided I’m going to take the rest of the year off from running. It’s only 3 weeks and I’m hoping that’ll give my knee and ankle time to totally heal. I’ll talk more about this later!
Jake told me he’d probably finish in about 2 and a half hours, so after 2 hours, I started to head up to the finish line. Right as I got out of the car, Jake rode over! He felt much better than he thought he was going to and ended up finishing 5th that day and 3rd overall in the challenge! How awesome is that?! I feel awful I missed his finish, but I am SO proud of him!
After the race, we grabbed one last meal in Bentonville. We went to Pressroom, which is one of my favorite restaurants in town. I had their smoked salmon meal. It was SO good.
They also had homemade oatmeal cream pies, so we HAD to get one.
Look what Jake’s parents got us for Christmas!!!!! This bad boy was sitting on our back patio when we got home. Jake’s Dad sanded and refinished the table – it is BEAUTIFUL! Thank you, Jeff and Penny!!! This will be so amazing for meal prep! I can’t wait to use it! (And by use it, I mean Jake use it…I don’t have the slightest clue how to use a smoker. Yet!)
We both showered, then cuddled up with Lu in Jake’s recliner.
We met my family for dinner at The Pitch. YUM. It was my Grandma’s birthday, so I am thankful we could all get together to celebrate! I had their new potato pie – it has a sweet potato base. So. Good.
After dinner, we took my grandparents to 4 By 4 for a beer. My Grandma even got her name on the board!
I got up early Monday to get to a TRX class, which was amazing. Then it was home to have breakfast with Jake. Egg and veggie scramble, waffle, and sausage.
Oh. My. Gosh. This protein. I have never had a protein
that tasted SO amazing. This Vega Salted Caramel is off the charts. I’m sad I only got 3 singles. I’m going to search today and see if I can find a whole container. Guys, this is DELICIOUS.
I mixed that protein with blueberries, honey, ice, flaxseed milk, collagen, spinach, superfood greens, and water. It was an amazing smoothie.
I got a TON of grading finished yesterday. Afterward, Lu and I relaxed on the couch and enjoyed lunch.
I love this quote. We can wish for things to happen or be different, but until we do something about it, change won’t happen.
I did some mini meal prep yesterday. Jake’s lunches for this week – bbq chicken wraps.
Cutting onions makes me cry SO bad. My Mom has onion cutting glasses that she wears. They really help her! Maybe I need some…
This is one of my favorite recipes – Sweet Potato & Steak nachos.

First step – cut two sweet potatoes into thin round pieces. Coat with ghee, salt, and garlic powder. Cook at 400 for 15 minutes.

Add chopped up cherry tomatoes, red bell peppers, and onion on top of the cooked sweet potatoes. Cook at 400 for 15 minutes.
Add cut up ribeye steak to everything, top with Primal Palate steak seasoning and cook at 400 for 10-12 minutes, depending how well-done you like your steak.
The finished product!
Top with whatever you would like – jalapeños, cheese, sour cream, Greek yogurt, etc. Enjoy!! This meal is definitely a favorite and it’s easy! Clean up is easy too since it’s just one pan. Mmm.
Guys, it’s graduation week!!!!! I am beyond pumped. I can’t believe it. We leave Friday, late morning, to head to Columbia. Eek!
