Just in case you were wondering…
Egg white steel cut oats for breakfast yesterday! I loved hearing how many of you wanted to try this – it’s a game changer! So. Good. The egg whites (or whole egg) make the oats so creamy.
I worked all morning on getting my classes ready. I think I have about two more days of work before they’re ready to go. I like to get the entire semester set-up, so that can take awhile. One of my classes is a hybrid (online and seated), so that will be a nice change. I get to go into classrooms and observe my college students. I’m looking forward to that!
I am not running on Mondays right now, which is new for me. Mondays are a cross train day, so I threw on my old JuiceLand crop and did a little workout before lunch. I wish Springfield had a JuiceLand.
I found this workout online. It wasn’t quite 30 minutes, so I added some additional abs to hit the 30-minute mark.
Lunch was a bbq chicken sandwich, sweet potatoes, and broccoli. I have discovered that white cheese doesn’t make me miserable, so I’m going to see if that continues. I love Pepper Jack.
I worked until about 4, then hopped in the tub for a soak. It’s weird knowing that I’m not going to be a student this semester. This will be the first semester in over 10 years that I haven’t been a student…that’s crazy to me.
For dinner, we had veggie fried quinoa. So good and so, so easy! I cooked the quinoa like normal (2 cups liquid for every cup of quinoa), then, in a separate pan, I sautéed carrots, broccoli, mushrooms, and eggs. I put coconut aminos on the veggie and egg mixture, then topped the quinoa with it. YUM. And the best part…there are leftovers!
After dinner, we met our friends, Kallie and Coty, to watch a football game. I loved the pen our waitress had, so I took a picture because I need to order some. Anyone else do that? I might have a slight pen obsession…
We crawled into bed as soon as we got home. I was so tired! Sure enough, as soon as we turned the lights out, I was wide awake. Uuuugh. Normally, when I can’t sleep, it’s because my brain won’t stop going, but that wasn’t the case last night. I just couldn’t sleep! I must’ve drifted off right before my alarm went off because I remember looking at my watch at 3:54, trying to decide if I should meet the girls to run or not. My alarm went off at 4:10 and I decided to stay in bed and try to get some sleep. Well, Jake’s alarm went off at 4:30, so I was wide awake again. I wanted to try one more time to get some sleep, so I stayed in bed. Jake’s clock alarm, which he had forgotten that he set, went off at 4:45. I finally gave up on trying to get some sleep. Maybe I’ll have time for a nap later. This was when we crawled into bed, definitely not my face after not sleeping, HA!
I’ll have puffy eyes the rest of the day. I really hate not being able to sleep. It’s miserable. If anyone else out there suffers from insomnia, I’m so sorry! I hate it for you.

Now it’s time for all the coffee. I have a run and some lifting to knock out later, so I’m going to try and work on my classes and then go do that. I’m not going to let being tired ruin my day!
