Dairy-free Heaven + meal prep tips + the best Buffalo Chicken Spaghetti Squash casserole!

I am getting used to having a handheld on longer runs. I used to hate having something in my hand, but now I’m growing to like it. I only take a handheld if I’m doing 10 or more miles.
I went to hot yoga after my run yesterday, then hit up the store on the way home. My parents used to buy Breadsmith bread all the time when I was growing up. I’ve started buying it again and it always reminds me of childhood dinners at home. The sourdough is my favorite.
i found some dairy-free heaven!!! I haven’t tried the one on the left yet, but I legit ate half of the tub of the one on the right…
It’s like a spicy cream cheese and I love it. I ate so much…it’s made out of cashews. 
Another day, another computer picture! I am almost finished with an article I’ve been working on. It needs to be submitted Monday, so I’ll probably take the weekend to finish it up.
When you get spanked because you ran away and hid from your Mom under a muddy shed…she’s just too cute to stay mad at for long!

We had one of my favorites for dinner last night: Buffalo Chicken Spaghetti Squash casserole. It’s SO good.
Here’s the recipe, friends! It’s SO good. Cook the chicken and spaghetti squash first. I left the carrots out this time, but they’re good in the casserole! If you add them, I’d cook them with the chicken to soften them.
So. Dang. Good. Also, why is sourdough bread SO amazing? I could eat an entire loaf.
Early morning run with my runner girl gang. Watch out! HA! It wasn’t that cold this morning, but the second I got home, I crawled into bed and just could not get warm. I am ready for some sunshine!
