No TMI post this week – things have been kind of bonkers, so here’s a normal post for today. And if you missed it last week – I shared about the WORST waxing experience of my life (you’re welcome) and some ingrown hair tips. It’s HERE.
Tuesday morning started off with a few early miles with Alex.
I mentioned the other day that I signed up to paint the inside of some schools in the area a few times a week. We had our first day of painting yesterday and had to be at the school at 6:30AM. It’s a little rushed getting there after a run, but I try to just make sure my breakfast is prepped the night before and that my lunches are packed. We are still having egg muffins and sweet potato toast. I took this on the go with me and headed to paint.
We had to sit through some training videos, so I looked through my watch in-between them. My V02 max went up again. I don’t know how accurate this is, but it makes me feel like I’m training properly when it goes up. I think this is the highest it’s ever been. It’s usually 51. Anyone know how accurate Garmin is with this? I know Garmin’s race predictors are WAY off for me…it says I can run a 3:11 marathon. HAHAHAHAH. No. I have THIS watch.
We had trainings for painting all morning. Part of our training was at the Sherwin-Williams paint store. They ended up treating us to lunch – Jimmy John’s, which is one of my favorites – BUT, I made a goal to stick to non-processed food, so I didn’t eat any of the Jimmy John’s and stuck to my tilapia and broccoli. It was pretty delicious.
I got a bunch of Strava notifications after lunch. I asked Jake why he was so obsessed with me. ; )
All. The. Painting. We painted for 4 hours yesterday and got a lot finished. We will normally paint for about 8 and a half/9 hours. I think there are about 30-40 total painters this summer and some will paint every day. I am still tutoring two kiddos and we meet in the mornings, so I just signed up to paint twice a couple times a week right now.
I leave for Colorado on Thursday to go to the Trail Sisters Running Retreat! I am SO stoked. I know mountain weather can change, but check out the forecast for right now. It’s going to be perfect! I’ll be in Boulder from Thursday to Sunday. We will be doing ALL the running, learning, and friend-making. This will be my first trip like this totally on my own. I am excited and nervous! I also can’t believe that it’s already Wednesday…time is FLYING.
I had gotten shrimp with grocery pick-up this week, but I honestly didn’t know what I was going to do with it. I ended up making blackened lemon shrimp, roasting beet noodles, and putting all of that on top of a massive pile of spinach. It was crazy good. We also had lentils on the side.
I want to remember this salad! So easy and so yummy.
Jake and I were both bummed to not be at the lake over Memorial Day weekend. Here’s a throwback from 2 years ago when we spent some time down there with friends.
And one year ago over Memorial Day Weekend, we are in Colorado for our wedding! Isn’t it crazy how fast time flies? I can’t wait to be in Colorado TOMORROW!
