I am loving these quinoa breakfast bowls this week. Quinoa is not Paleo, but it’s so full of nutrients (protein, fiber, Vitamin B), and it’s gluten-free, so we love incorporating it into our diet – how we eat, not a calorie deficit. I’ve been topping cooked quinoa with maple syrup, walnuts, peanut or almond butter, a banana, and cinnamon.
I love getting to tell Jake about improvements I’m making. Sometimes knowing that he’ll be proud of me is motivation to push or keep going. I’m definitely not “fast” on a bike, but I’m making small improvements each time I ride. I think that’s one of the coolest things about starting something new – you’re able to make some sort of improvement or PR/PB every day. I don’t know if the same is true for something you do all the time/are good at doing. When I run, I definitely don’t finish each run with a new PR or an improvement. I do think I make mental improvements more often than physical with running, since my physical improvements require time and dedication. Does that make sense? I’m rambling. Anyway, it feels good to see progress on my bike. Progress is progress, no matter how small!
I rode 10 miles and felt stronger!
After my ride, I rushed home to get ready, then met my Mom, sister, Eleanor, and Grandma for lunch. Yesterday was my Grandma’s 81st Birthday, so we got to celebrate her at lunch. I love the glasses we used. We went to Ms. Gilmore’s Tea Room. It was SO cute and the food was delicious.
Not Paleo, but quiche is one of my favorite things, so I wanted it. It was amazing.
Someone had really cute jean overalls on, but had an accident and had to change. No, it wasn’t me. ; ) I got to love on this cutie during lunch.

I was so tired yesterday afternoon, so I took my computer to bed with me and worked on things from there. Rhea got to cuddle, which I think she enjoyed. Both girls are still scared to walk by the spot where they knocked over my huge mirror. I shared yesterday that they crashed into the mirror, causing it to slam against a wall, then shatter EVERYWHERE. I was so bummed.
She has to be touching you with her at least one of her paws. She cuddles hard.
I took Jake to work Tuesday morning, so when I went to pick him up, I took snacks. He was pretty excited.
This dinner is so quick and easy! We had taco boats last night. This meal takes 10-15 minutes. That’s it! Once you have the ground turkey (or beef or whatever you want to use), you just pile it all into big lettuce leaves and top with your favorite taco toppings – we used onion, tomatoes, jalapeños, salsa, and avocado. YUM.
They’re messy, but delicious.
Jake almost always falls asleep before me. The second his head hits the pillow, he’s out. It’s unfair.
