Something fun + my favorite chicken + bike, beer, & bugs!

This is Rhea girl’s favorite new spot to sleep. It’s adorable.
I did not sleep well Sunday night, but I still got up at 4 and knocked out a workout. 30 minutes on the elliptical and some lifting to start off the day.
Oooh, these breakfast burritos are delicious. They just have zucchini, turkey sausage, black beans, and eggs. YUM. Oh yeah, and hot sauce.
My Monday was fueled by coffee and productivity.
Two years ago we were in Leadville, CO for Jake’s races. I wish we were back there this year! We were out there for two weeks. I loved every second. Jake proposed when he crossed the finish line of his hundred mile run, too! It was a special few weeks. This picture was taken before Jake started his hundred mile bike race – aaaaand before I dropped my phone down into a sewer. Ugh. It was awful. I had just kissed Jake and wished him good luck. He handed me his jacket, and as he did, I fumbled and dropped my phone. We just happened to be standing over a sewer opening. Down went my phone. Then the gun went off starting the race. We had to leave my phone and head to the next spot where we would see Jake. It was stressful and my phone was down there ALL day. We finally made it back to the start line to watch the finish. Before Jake crossed the line, Chelsea, Jake’s sister, climbed down into the sewer to get my phone. It was just fine! I couldn’t believe it. Thank goodness there hadn’t been any rain. It was a crazy day!
Lunch was delicious – spaghetti squash, turkey and zucchini meatballs, and spaghetti sauce.
I got markers and a coloring book! So relaxing.

Okay, guys, this is my secret chicken recipe. It’s SO good. You can bake this in the oven, but it’s WAY better on the stovetop because the chicken gets crispy. All this is is turmeric, garlic powder, cayenne pepper, and coconut aminos. Mix all together and cook the chicken. I just flip it a lot until the temperature reaches 165°. It’s seriously amazing. Jake is obsessed with it, too. It’s not burnt, that’s just the seasoning all crispy. YUM. 
So. Dang. Delicious.
I topped spinach and a sweet potato with the chicken for dinner.
After dinner, we went on a bike ride since our usual Monday Night Ride was canceled due to heat. I am not using my clip less pedals yet, but I wore my new shoes with my flat pedals, just to get used to them.
Jake and I played a riveting game of Connect Four – he won.
We enjoyed a beer and being outside. Jake also gave both of us bike tips, which we needed. I am getting more comfortable on my bike, which makes me happy. Riding has made the past 6 weeks of no running a lot easier.
