No heat + favorite new hair accessory + frustrations!

Jake and I decided these are our favorite egg muffins! I made 15 – they have 15 eggs, one bunch of asparagus, half a container of mushrooms, and one package of turkey sausage. I added a little salt, onion powder, turmeric, and black pepper to the mixture, then baked them in my silicone muffin cups at 350° until they were cooked through. YUM.
I attempted to run in the afternoon since I didn’t sleep very well Monday night. I have never been very good at running in the heat. It just kills me. Turns out, that’s still the case…I cut my workout short because running in hot weather is just not my jam.
I had the biggest cold salad after my hot run. It was delicious. If you haven’t tried hemp hearts and balsamic glaze on your salad, you’re missing out.
My Mom tweaked her knee, so I drove her around yesterday to get a knee roller to use. She was going so fast on it that she kept running into things and I was worried she was going to wipe out. I told her she was like a wrecking ball. I thought this GIF was appropriate when she told me she had learned to back-up. Ha!
THIS is the best thing ever. I ordered it when it was bit cheaper, but I just got around to using it. I am obsessed! I have super thick, curly hair, so just blow drying my hair takes forever. Then after it’s dry, I have to straighten it. This bad boy did both! I think using this cut off maybe 10 minutes from the whole process, so nothing huge, but I felt like I had gotten a blow out from a salon. My hair was bouncy and just felt really good. I wish I would’ve gotten this sooner. It’s super easy to use and you don’t need any special skills, which is perfect for me!
Dinner last night was delicious and easy. Sweet and spicy salmon (chili powder and brown sugar), and asparagus and mushrooms. I cooked the salmon with ghee on the stove top once I had seasoned it with the chili powder and brown sugar. It probably cooked about 3-4 minutes on each side. I started roasting the veggies before cooking the salmon. I roasted them at 375° for 25 minutes, stirring twice. The veggies had onion powder, a little Lowry’s, and some butter. That’s it!
5 miles with Alex to start the day! I am still feeling really good. Well, my foot/ankle feels good. I feel very out of shape, but I’ll get it back! I’m still focusing on therapies, prevention, and taking it a day at a time. All that being said, I am SO happy to be back running. If you’re going through something hard right now that is keeping you from doing what you love, I am so sorry. It WILL get better! I had to remind myself of that a lot during my 6 weeks off.
I am not a patient person. I also struggle when it comes to waiting on others to get things accomplished for me – I just want to do whatever it is myself. I know that’s not always feasible, I’ve just always been this way. I was supposed to start my job today, but I’m still waiting around on some HR stuff. Soooo, maybe tomorrow? It’s frustrating, but I guess I need to soak up these days! I know it’s not that big of deal, but I’m excited to get started in my new gig. I did sleep REALLY well last night, so that was wonderful!
Happy Wednesday, friends!
