This is pretty much where these two stay once we are home from work. Lazy girls.

I’ve been taking breakfast to school with me…this week has been bonkers, so I’ve been running out of time to eat at home.
I spent Wednesday looking at data and helping teachers with some lesson plans, so the day flew by. I took a break for lunch at some point. Chicken, rice, black beans, corn, zucchini, coconut aminos, and salsa. YUM.
I am obsessed with this stuff. Remember when I didn’t like carbonated drinks? That’s gone. I love them now.
Like quick dinners? Made this one in TEN MINUTES! Poke holes in a sweet potato & wrap with a damp cloth. Microwave in 2 minute increments until soft (ours took 6 minutes). While that’s cooking, put a handful of spinach on a plate, place the cooked sweet potato on the spinach & cut in half. Add whatever protein you’d like – we had leftover chicken sausage, so I heated it up & added it. Top with goat cheese, BBQ sauce, & Sriracha. Chow. Down. So good, it shouldn’t be this easy.
She stuck close by me all night. I think she’s missing having me home. I miss her (and her ornery sister) when I’m gone, too.
Thankful for friends who will run in early in the mornings with me! I asked if they wanted to do a tempo workout today and they agreed – they’re the best.
Our pace goals were 9:30, 9:15, 9:00, 8:45, 8:30, 8:15. I was pretty pleased with where we ended up! I am so happy to be back running. That dang injury sure made me appreciate my ability to run.
Just an FYI – tomorrow is Friday the 13th and a full moon. WOOF. Watch out!
