Lazy pups + matching oops + the easiest, best shrimp tacos EVER.

If I set anything on our bed, this one immediately lays down on it. I have to hang up clean clothes right away, otherwise, they become hers.
Monday morning started out with 3 recovery miles with my pups. Rhea was extra cuddly and kept trying to sit on my lap as I was foam rolling.
The second I grabbed my running shoes, Lu jumped into my lap. She was ready for her run.
Yesterday was the first day of fall, so a little animal print was necessary. I walked into school and was matching another one of the learning coaches, so I felt like I chose well. ; )
These overnight oats turned out even better than I thought they would! YUM. Ingredients HERE. I topped them with almond butter.
Sometimes you need to match your lips to your coffee mug.

Lunches this week Include tuna salad and sweet potato fries. I just put my tuna salad on top of a bunch of spinach and it was amazing. I prepped the tuna salad and the sweet potatoes in 30 minutes on Saturday, so this was a super quick and healthy meal.
I had a busy afternoon at school, followed by a meeting right after school, so I got home a little after 5. This is literally my favorite way to prepare shrimp. It’s so easy and crazy delicious. Once your shrimp is thawed, put it in a pan with about a tablespoon of ghee and maybe 1/8 a cup of Frank’s hot sauce. I also add in some black pepper, onion powder, and garlic powder. Just let all of that simmer until the shrimp is cooked through. Once it is cooked, turn the heat up to high and let the sauce really simmer.
The sauce turns into a kind of breading . It’s seriously so good.
I used the shrimp to make tacos. I topped two yellow corn tortillas with spinach, black beans, the shrimp, onion, jalapeños, goat cheese, and a little bit of Primal Kitchen’s ranch. This dinner was the bomb.
I have been keeping up with my goal to strength train 2 to 3 times a week! I did this short work out last night. You can do this in 12 to 15 minutes, so it doesn’t take a lot of time out of your day.
Jake came home from his meeting and ate dinner, then we watched an episode of The Originals on Netflix. We both have our favorite spots on the couch, so this is how we cuddled.
Alex turned 29 on Saturday, so obviously the perfect gift was a trashcan. She has a dog who likes to go dumpster diving in the bathroom trash, so I’ve been teasing her about needing to get a trashcan with a lid. I thought I’d just get her one for her for her birthday.

temps. I am so excited that fall is here!
