Yesterday was a crazy busy day at work. The day flew by and before I knew it, it was time for lunch. My desk was chaos. I love having a standing desk, but I feel like it takes away from a lot of desk space.
Do you have an addiction to hot sauce when you have a small bottle in your desk? I needed it. I saw this at the store, and it was on sale, so I wanted to try it. I do not like it as well as Cholula or Sriracha.
Friends, I made the best dinner of my life last night. I had an idea in mind, and then when I went to bake the chicken, it had gone bad. So I had to switch things up last minute and I’m so glad I did. This dish is one of my new favorites. It’s a cauliflower rice risotto, and I made it in five minutes. I just took a bag of frozen cauliflower rice, added some ghee, threw in some pickled jalapeños, and let it all simmer. After the cauliflower rice was almost cooked all the way, I added maybe half a cup of shredded mozzarella cheese and 2 to 3 tablespoons of Primal Kitchen’s ranch. I let everything simmer, stirring a few times, and it was ready to eat. So. Dang. Good.
Since I had to scrap the chicken, I thawed some salmon fillets, wrapped them in bacon, covered everything with chili powder and brown sugar, and then put them in the AirFryer. I cooked the bacon for about three minutes before wrapping it around the salmon, just to make sure it would be crispy. I used the fish setting on the AirFryer, so I think it cooked these about 10 minutes at 350.
I posted about dinner on Instagram and got a ton of questions about how I cooked the okra. It’s SO simple – I buy frozen! I tossed it on a baking sheet with maybe a tablespoon of ghee and two tablespoons of coconut aminos. I baked it at 350° for 20-25 minutes, stirring occasionally. That’s it! This dinner was the bomb.
I finally put a few fall things out. It’s so fun decorating our new home. I can’t wait to get our Christmas decorations out! And no, I’m not trying to rush through fall – it’s my favorite season!! I just love Christmas time and it’s going to be extra special since it’s our first one in our new house.

We are headed to Arkansas this weekend, but decided to stay in town and spend time with my Grandma this evening. She has a body scan and biopsy Monday, so please keep those prayers coming! We appreciate them.
