Snow day fun + protein coffee + food is my favorite…except pork.

After my run yesterday and the glorious phone call that school was canceled, I came home and changed into my comfy sweats. I heated up my breakfast burrito and made myself comfortable on the couch. It was amazing. Don’t get me wrong, I super love my job, but when it’s crazy cold outside, I don’t hate being able to be cozy on the couch.

Snow day protein coffee pork is gross

 

After breakfast, I made some protein coffee and spent the morning taking a MasterClass. I have some exciting things happening and I cannot wait to share them with you, but in the meantime, I am trying to teach myself as much as I can.

Like I said yesterday, I did not sleep well at all Monday night. I don’t know what the deal was, but I think I slept about two hours the entire night. When I got the call that school was canceled, I knew a nap was in my future. About 10 AM, I started getting tired, so the girls and I crawled into bed. I think Rhea thinks she is about the same size as Lulu. She tries to sit right on top of us. At least she is warm!

I am trying so hard to like pork. I don’t think I have ever been a huge pork fan. Don’t get me wrong, I love bacon and sausage, but pork loins and pork chops have never been something I craved. This is TMI, but I feel like pork taste like poop sometimes. Well, what poop smells like. I haven’t eaten poop before. How many times do you think I can say poop in this caption? ; )

Anyway, I prepped a pineapple pork tenderloin, hoping that I would love it. This has pineapple chunks, pineapple juice, coconut aminos, and brown sugar. I put it all in the crockpot and let it cook on low for seven hours.

After I threw dinner in the crockpot, I had lunch. Buffalo chicken over spinach, topped with goat cheese with hard-boiled eggs and pretzel sticks.

I spent the afternoon vacuuming, doing laundry, and taking a couple of the sessions within my Master Class. Jake got home after work and went to ride with a buddy, so the girls and I lounged on the couch and watched Netflix. I just started re-watching friends. We definitely had a lazy, but productive day. Does that even make sense? No clue, but it happened.

Guys, how pretty is this plate? Too bad I still hate pork. I took two bites of the pork and was grossed out. It tasted like poop smells and I just can’t do it. I dumped the meat, but the broccoli and the greens were delicious. I guess I just need to give up on pork. Except for bacon and sausage. Those are here to stay.

While Jake was out riding, I shared a picture of dinner and wrote about my pork issues. I got this text from him. How sweet is he? He ate the pork and said it was fine. I guess it’s just me.

More couch cuddles once Jake got home, then we crawled into bed. It was a wonderful snow/ice day.

I get this weird knee pain occasionally. It’s my patella tendon and it is super painful. It seems to happen while I am sleeping. Well, I had it last night and it was the worst it has ever been. It kept waking me up, so I finally went into the kitchen and grabbed an ice pack. Nothing like icing a body part at 2 AM. I have no clue what causes it, or how to keep it from happening, but I really hate it. It gets to where I cannot bend my knee and it’s super painful to the touch. Anyone else ever experience this? The top of my knee is swollen where that tendon runs, too. But, I know that later today, it will be back to normal. It’s like it just gets flared up, is super terrible, then is fine. I don’t know if I am doing something to aggravate it or if there something I need to do to take care of it, but I want it gone. 

I have a bunch of meetings this afternoon, then will knock out a little workout, then head over to my Grandma’s for a little bit.
