Weekend Wrap-up!

This weekend FLEW by. For not having any major plans, our days sure filled up quickly. I started Friday morning with a nice little bloody nose at school. One perk of the dry, winter air, huh? We have been running our humidifier every night, so that should start helping!

After school on Friday, I headed over to my Grandma’s for a little bit. Her brother and sister-in-law stopped by to say hello while I was there. She was a little out of it and kept getting confused when telling stories, so I encouraged her to rest. She fell asleep immediately. I think she was tired. She always has a lot of visitors/phone calls, which she loves, but I think they wear her out sometimes.

I sat on her couch and relaxed while she napped. She had a caregiver coming to spend the night with her, so I hung out until she got there. I am so amazed by the incredible women my Mom has found to care for my Grandma at night. She loves all of them and looks forward to seeing them. It makes our hearts happy to know that she is well taken care of by women that truly care about her.

Jake and I had an at-home date night Friday night. We made stir-fry and finished our Netflix show. We had been watching The Originals for the past 5-6 months. I was VERY invested in the characters and cried like a baby through the last 3 episodes. Anyone else ever get attached to characters in a show you’ve been watching for awhile? I always do.

I slept in on Saturday, then headed out the door to enjoy the sunshine. I decided not to run trail in order to give my ankle a little more time to heal. I knocked out 10 miles. I did 3 solo, 2 with Lu, and 5 with Rhea.

Jake knocked out a 50-mile bike ride and finished up the same time I finished my run. I made a massive scramble with eggs, potatoes, spinach, chicken, and jalapenos. It was delicious.

Our friend, Brandi, was doing a super fun holiday photo shoot, so we got cleaned up and headed to her for some pictures. I cannot wait to share them with you!

After pictures, we met Jake’s family for dinner at Galloway. I had the wings and a side salad. They’re wings are SO delicious.

After dinner, we headed to Great Escape for delicious beer and some live music. A bunch of our friends met us there.

Sunday morning, Jake and I both slept in a little, then got up and had breakfast. I was craving oatmeal, so I made a big bowl. It hit the spot!

After breakfast, I got started on meal prep. I made a version of a sweet potato crust quiche. I HATE shredding sweet potatoes, so I found this in the freezer section at Walmart and decided to try it out as the crust. It’s a frozen package of shredded potatoes, sweet potatoes, broccoli, and cauliflower. It worked perfectly! I used two packages for my quiche.

I don’t know why the quality of this picture is so terrible, but here’s what I put in the entire casserole.

Here’s the quiche before I baked it. It has coconut milk, almond milk, turkey sausage, bacon, mushrooms, and goat cheese. YUMMMMMM. I cooked the bacon in the oven before adding it to this…best decision ever. It was SO perfect – the right amount of crunch.

While breakfast cooked, I started on lunch. We are having a taco pasta this week. This has veggie pasta, chicken, ground beef, corn, spicy rotel, tomato paste, verde salsa, and sliced peppers. It’s amazing. I had a bowl leftover after portioning it out, so I had that for lunch yesterday.

When I finished with meal prep, Lu and I loaded up and headed to Sac River to see Jake and Rhea. Jake was out at an event with MORC and took Rhea on her first mountain bike ride/run! He said she did AMAZING and ran right behind him the entire time he rode. We were so proud! She was having the time of her life – she LOVES little kids and Jake sent me this picture of her. HA!

Lu was all tuckered out after playing with Rhea and everyone at the event. She passed out the second we got back into the car.

I knocked out a lifting workout when I got back home. Jake got some edible cookie dough, so I lounged on the couch and enjoyed that after my workout. Balance.

We were both ready for some cuddles later in the afternoon.

I have meetings today, so I have a feeling the day will fly by. Mondays always seem to be busy and go quickly – I’m not complaining about that! I ran with my pups this morning, threw dinner in the crockpot, and headed to school!

    I love how all of your recipes are all just a mix of the healthy ingredients without a lot of extra fuss. I do wonder if you have any secret knacks for making your dishes that you might be willing to share because I can jump on the breakfast quiche train! 🙂
