This girl is such a cuddle bug. We try not to let her on the couch very much, but I had missed both of them so much while we were gone, so I’ve been soaking up all the cuddles.
After my run at the Y yesterday, I did a short arm workout. I get overwhelmed with trying to fit in all of the things I need to be doing, so I have started breaking workouts/stretching up. I’m going to try alternating arms, abs, and legs. I think with my morning runs, breaking up everything else will make it seem a little bit more doable. I also need to be stretching and doing my foot/ankle therapies. So far, the schedule is working really well!
After my workout, I came home and got cleaned up, then threw dinner in the crockpot. I had browned the bison the night before, so I just chopped up a head of purple cabbage, half an onion, eight celery sticks, and a bunch of carrots. I threw all those veggies into a crockpot with the bison, Italian seasoning, garlic powder, onion powder, turmeric, black pepper, and some beef broth. All of this cooked on low while I was gone for the day. I LOVE coming home to dinner being ready.
I took my breakfast to school with me. I think these might be my favorite overnight oats of all time. The recipe is HERE. Jake is not a huge fan, but he doesn’t like cake batter of any kind. Whoops. I used a cake batter protein powder, so these are extra delicious. You can literally substitute any protein powder that you would like. I will make sure to do that for him the next time I make these.
Yesterday was a crazy busy day. I hadn’t been at school since last Friday, when I left in the morning to go spend time with my Grandma and family. Then, I was out all day on Monday and Tuesday for a training, then we had Thanksgiving break, so it had been over a week since I’d been in the building. I felt super behind all day, so I never left my desk. At some point I took a break for lunch. I had beets, brussels, and tilapia. I think these beets and brussels are my favorite. I just baked them at 350° with ghee and different seasoning. They are delicious.
I had been waiting all day to do this. Wine, cozy sweats, and relaxation. We are supposed to get our Christmas tree sometime this week – I can’t wait to sit in the dark and stare at our tree.
This soup turned out to be so delicious! The recipe I followed is HERE. And I was low on carbs for the day, so I added some pretzel sticks and a little bit of peanut butter to my dinner. I definitely did not need it, because the soup made me so full.
After dinner, we spent the remainder of the evening cuddling on the couch. It was much needed. I was so worn out.
At 7:30PM, I brushed my teeth and washed my face. I was in bed by 8 o’clock, and I bet I was asleep by 8:30PM. I slept like a baby. I was still kind of sleepy when I woke up, but I think I’m just still trying to catch up from sleep from being up until almost 2 AM two nights during Thanksgiving break – Jake and I both got into Florida super late, I didn’t stay up that late on my own…we all know I can’t hang. Alex and I got a 6-mile run in this morning. She kind of kicked my butt. I told her I was just dragging, so she led the pace. Jake and Rhea finished up their run about the same time we did, so we ran with the two of them for a little bit around our house.
I have a fun open house with FEM tonight. It’s that local entrepreneur group for women that I am a part of. I am excited to see everyone and chat with them about the awesome things we have going on. Stay tuned! ; )
