Oh my gosh you guys, this breakfast casserole is incredible. I was sad when it was gone. I highly recommend making this. The recipe is HERE. I omitted the gravy. Make it and thank me later!
I spent the morning at school on my computer and being in short meetings. I took a break for lunch at some point: chicken gyros. So delicious.
I stopped by my Grandma’s house after school to help my Mom post some of her furniture to sell online. After I did that, I came home and started on dinner. This ended up being super delicious and was SO easy and quick to make. I mixed together a pound of Italian pork sausage (which is one of the only forms of pork I like – that and bacon) and a pound of ground beef. I added garlic powder, onion powder, turmeric powder, and black pepper to the meat mixture. I mixed everything together and rolled the mixture into meatballs. I put them in a big pan with Worcestershire sauce and red wine. I let everything simmer until it was cooked all the way through, which was about 20 minutes. While those cooked, I heated up spaghetti sauce and sautéed some zucchini noodles in ghee. This entire dinner took me less than 30 minutes to make. The meatballs turned out incredible.
I put everything in a bowl and topped it with a little bit of Parmesan cheese. YUM.
Jake was at a meeting for the cycling team he is on, so I ate dinner while watching New Girl and folding laundry. It was the best way to end my Monday.

I sat in the dark with our Christmas tree on. I love this time of year so much. This is how Rhea attempts to be on the couch…she’s always resting her head on something.
I got up at 3:45 this morning to foam roll, do an ab work out, and knock out my foot therapies before my run. When my alarm went off, I felt very awake, which is not normally the case when I get up at 4 AM. Maybe I’m onto something and my body likes 3:45 AM better…

I turned our tree on the second I woke up. Whenever I am home, it is going to be on. I think the girls love it.
I ran a mile on my own, then met Alex for four more miles. It was pretty chilly this morning and my running tights were not warm enough, so my legs were pretty cold. I always struggle when the seasons change to remember what to wear for different temperatures. I am making a mental note to not wear these capris again if it is below 30.

What a yummy casserole … I would probably skip the gravy too! I am thinking I will try to recreate this without the egg yolks because I can’t stand the flavor of the yolks … Do you think it will turn out just the same??
Also, super jealous of your weekly meal plans … I wish I had the dedication to make weekly meal plans BUT I just get lazy on the weekends and get the food I need to make quick meals throughout the week (benefits of working from home is that I always have the kitchen available! haha)!

I am a wreck if I don’t meal plan…it just helps me keep my sanity! I did love working from home because I didn’t have to plan like I try to do now. It was nice having a fridge full of options.
