This smoothie is delicious + foooood + weekend plans!

This smoothie is SO delicious and creamy. One scoop chocolate PB protein powder, one scoop of collagen, 1/4 cup oats, 3 dates, 1 tablespoon PB, 1 banana, 1/2 cup almond milk, and ice. It’s a new favorite of mine.


I had a few meetings at school yesterday, then knocked out some computer work. Lunch was THIS chicken and potato casserole. I have loved having this for lunch this week. A few teachers at school printed off the recipe and are going to make it, too. I love sharing good recipes.


I had the worst headache all day yesterday, so as soon as school was out, I went home, put on sweats, and lounged on the couch. After some Tylenol and almost 2 hours of doing nothing, my headache started to subside. I finally decided to start on dinner around 5:30 – we had venison burgers on top of portobello mushrooms, with sourdough toast (and a salad for Jake). I think this dinner was ready, from start to finish, in 20 minutes.


I topped the burger patties with Pepper Jack cheese and a little balsamic drizzle. They were so delicious.


A cider sounded good, so I grabbed one that Alex brought me awhile ago. It hit the spot and was the perfect after-dinner dessert.


No clue how this was comfortable, but Rhea slept with her head on our coffee table for a LONG time. She’s so goofy.


We got a little bit of ice, but nothing like everyone was expecting, which is good! We are in school today, which makes me happy. I didn’t want another snow/ice day. I’m hoping we will be able to get a run in tomorrow, so hopefully the ice doesn’t accumulate. We don’t have a ton going on this weekend, which I’m excited about. I have a 3-day weekend, so that will be super nice! I feel like 2020 is flying by already…I can’t believe we are over halfway through January. That is crazy.

I miss being on a training plan. I took a LONG time to just run what I felt like, but I have the itch to train for something again. I am going to start officially training on Monday. What am I training for? No clue! HA! But I am going to be more structured in my runs and workouts. I’m excited. If you think of a late spring marathon I should look into, please let me know! I’m thinking May/June.
