I have been loving my treadmill lately. I’ve been lazy and choosing warmth and treadmill miles over early morning outdoor miles when I’m solo. I think the pups like it!
After my run, I threw TWO meals into our crockpots – they will last us for four dinners, which makes me SO happy. This one is Hawaiian Crockpot Chicken. One can of pineapple chunks, a little BBQ sauce, and some chicken breasts. I let everything cook on low for 8 hours. We had this last night. So. Dang. Delicious.
This second crockpot has everything for chicken tacos, which we will have Wednesday and Thursday. Literally just 3 chicken breasts, a can of rotel, some chicken taco seasoning, and a little bit of Frank’s hot sauce. This also cooked on low for 8 hours. When it was finished, I shredded it, drained the excess liquid, and put it all in the fridge.
For breakfast this week, we are having Vanilla Chai smoothies. Recipe HERE. Holy cow. They’re delicious. I got the below packets of chai tea latte to mix in – AMAZING. I will definitely buy these packets again. I didn’t want to have to make any hot tea, so these saved a lot of time. Jake loves them, too! If you click on the picture, it’ll take you to the link. YUM.
This is what I call easy “meal prep”. Half a salad kit and two tuna packets. Simple and delicious.
I am ready to get back to some track work. I wrote up this little workout for this morning. I love the Garmin workout options. You create a workout in the app, send it to your device, and then can use it right away!
I spent the day at school stuffing envelopes to go home containing test and attendance data. Part of my team got a lot of 6th grade finished on Friday while I was gone, but I helped finish up that grade, then I knocked out 7th by myself. It was ALL day. ALL. DAY. By the time I finish with 8th grade, it’ll be about 478 letters or so. I have so many paper cuts…buuut I did find a system that makes it all go pretty quickly!
After school, I stopped by Lucky’s, which is a grocery store here in town that we LOVE. It is closing down, which is so sad, but all of their inventory is on sale. I stocked up on some goodies and even for some new jerkies to try. They’re both super tasty.
Jake drove me and a bunch of my girlfriends to Midnight Rodeo Saturday night. He took all of us in the van, and he even put a bunch of folding chairs in there for us. I hopped in the van last night to grab a couple of things and couldn’t help but laugh at the chairs that were still in there. It was the best way to get to a bar.
When Jake got home from work, we had the Hawaiian chicken from one of the crockpots. It was so delicious! Anything with pineapple and barbecue sauce is going to be amazing.
Lu got some cuddles on the couch after dinner.
Tuesdays call for track workouts!
Jordan and Brittany were also with us, but they didn’t have a track workout, and we were running close on time, so we didn’t get a picture of the whole group. I love that we are all able to run together even if we are not doing the exact same things. Alex and I did the same work out, Kayla did her own workout from her coach, and Brittany and Jordan ran some non-track miles. I’m going to be starving all day. I am always super hungry after speed work.
Here’s what I ended up with for the day. 2 mile warm-up, 4 x 600 at 6:30ish pace with 1:00 walking recovery, 1 x 800 at 7:00ish pace, 2 mile cool-down.

Yummy! I am totally going to make your Pineapple & BBQ Chicken crockpot dish this week! I need to get on the meal prep bandwagon … work has been crazy lately and I have been subsisting on throw together meals which have been a tad repetitive! 😉
