We got a new protein flavor – mocha cappuccino. It is delicious! We have been using Optimum Nutrition’s protein powder for about 8 months and we both love it. There’s a link at the end of this post to the mocha! They have SO many different flavors.
Welp, I did it! I signed up for the War Eagle 50k in June. This will be my first 50k. I had signed up for the Dogwood Canyon 50k, but was battling some ankle stuff, so I dropped to the 25k. It was definitely the best decision at the time, but I am ready to tackle this distance!
I had some computer work in the morning followed by a meeting, so by the time lunch rolled around, I was starving! This lunch is pretty delicious. Chicken, black beans, a little pepper Jack cheese, spinach, and a tortilla. Mmm.
I spent a little bit of time updating my resume yesterday. I am definitely not looking for a job, HA, but some of the different proposals and articles I am submitting require an updated resume, so I am trying to stay on top of things. When I started my masters in 2012, my ultimate goal was to eventually get an online teaching job with a university. I knew I wanted to work from home, especially if Jake and I have kids. I love online learning and I am most productive when I am able to be in charge of my own schedule, but I didn’t want to ever give up teaching. As I was updating my resume, I spent some time reflecting on my various jobs over the years. I think I am still a little bit in shock that I have finally gotten my dream job. Don’t get me wrong, I have loved all of my different jobs over the years, but I cannot wait for August. Getting to be a professor at the University of Arkansas at Little Rock is an absolute dream come true. 
After school, it was home to hop on my trainer for a little bike ride and then to do my lifting workout, followed by foam rolling, stretching, and different foot therapies. I am doing everything in my power to keep my body healthy and happy as I start a new training plan. I thought my shirt was appropriate for a bike ride.
This dinner was delicious and super easy to throw together. I thawed frozen shrimp, and while they were thawing, I dumped a bag of frozen stir-fry vegetables into a pan with ghee and a little bit of teriyaki sauce. Once the vegetables were almost cooked all the way through, I added in the thawed shrimp, turmeric powder, onion powder, garlic powder, and black pepper. I let all of that simmer and then added a little bit of cornstarch to thicken up the sauce that had formed. I also made some quinoa to go with this shrimp stir-fry. It was incredible. 
I ate dinner and packed up a bowl of the stir-fry goodness for Jake to eat after work. When he got off work, he swung by our house to grab me, and we headed to the hospital to go see his Grandma. Jake’s Grandma, who was my Grandma’s best friend, has lung cancer and had surgery on Friday to remove a lobe of her lung. We are still waiting on some tests, but she is doing really well. It was nice to get to spend some time with her. Praying for a speedy recovery and good news from her tests.
After we visited her, we came home to relax on the couch for a little bit. Lulu stole a bone from Rhea, so Rhea laid on the carpet like this and stared at Lu and the bone. It made me laugh really hard. 
Lu got tired of chewing on the bone and made herself a little bed on my blanket.
The girls and I knocked out a progression run this morning and it felt so good to push myself a little bit. Our goal was to do the following – 9:30, 9:15, 9:00, 8:45, 8:30, and 8:15. Here are what our splits ended up being. I am pretty proud of us for keeping up with the progression.
