I normally use Mondays as a rest day, but I woke up Monday morning feeling motivated and ready to run, so I figured I would take advantage of that. I haven’t been doing much in terms of speed work lately, so I hopped on the treadmill for a 5-mile progression run. A progression run is a great way to make treadmill miles go by quickly because you increase speed each mile. I’m just now seeing that I left off a number in the below title of my run, but I did the following – 8:30, 8:15, 8:00, 7:45, 7:30. The 7:45 and 7:30 miles were HARD. I could definitely tell it had been a long time since I had done any type of speed work. This is a good starting place for me! I am motivated to start focusing on speed again.
Post workout hair = a hot mess. My braid was coming apart and my hair was pretty bonkers.
I cannot stop making this delicious egg scramble – two eggs, some egg whites, black pepper turkey, honey ham, and dairy-free Pepper Jack cheese. With beer bread, of course. SO delicious.
Yesterday was my first day of working at my new desk. Guys, it is AMAZING. I think I smiled the entire time I was working. It was just SO wonderful. My little co-worker kept steal my chair…she’s lucky she’s cute.
Anyone else communicate with their significant other using GIFs? I love finding ridiculous ones to send to Jake throughout the day. I’m sure he LOVES it.
I had a super busy Monday, which made the day fly by, by the time I finished mowing, it was time for dinner! Lu needed some love before we ate. She has been attached to my side like crazy the past few days. I love the extra cuddles.
Dinner was super delicious and crazy easy, which is the BEST. I made tortilla pizzas with salad on the side. It was SO good. Put a tortilla on a greased baking sheet, top it with whatever you want – I used spaghetti sauce, leftover ground elk, turkey pepperoni, and shredded cheese. Bake everything at 350 for 10-12 minutes. Top with balsamic glaze. Mmmm. So. Dang. Good.
My sweet friend, Michelle, was able to run with us this morning, which was amazing! Our runs look a lot different right now…we take up the entire street…HA! But it is so wonderful to be together for a little bit while we get some miles in. The weather this morning was PERFECT. The girls wanted to take a picture by the for sale sign in our front yard. HA! I love them.
