This breakfast is my new favorite. Steel cut oats with brown sugar, and an egg scramble with turkey, ham, spinach, and mushrooms. Topped with ketchup and salsa. YUM.
I spent the morning on my computer, took a break for lunch and an Epsom salt soak, then hopped back on my computer. Things are kind of winding down now since I won’t be back in my current position after May 21st. I start my new job as a college professor in August, which I am stoked about, but it’s a little strange right now as the year is winding down. A lot of the work we are doing now is to gear up for next year. I help when I can, but I feel a little helpless. I’m thankful I am still able to work with teachers during this time of remote learning, that helps keep me busy. When I finished with work yesterday, the girls and I crawled into bed to read. I sipped on a shake while I read. It was wonderful.
We got lots of cuddles in. Rhea likes to plop down right on top of me.
After our relaxing afternoon, it was time to celebrate Cinco de Mayo. I busted out a tank from my bachelorette party (it says “Down to Fiesta”) and an old sombrero I found in our garage.
This is the most delicious skinny margarita recipe – I have shared it on social media before. 2 oz tequila, 2 oz OJ, 3-4 oz Sprite Zero, 1 oz lime juice, and lots of ice. SO delicious and refreshing.
Alex came over last night for margaritas and Mexican food to celebrate Cinco de Mayo. She brought this bottle of tequila with her. It was amazing.
After one round of the above skinny margaritas, we tried a new recipe with some Skratch Labs hydration mixes. This was also super delicious! The recipe Skratch shared makes a pitcher of margaritas: 1/2 cup Sport Hydration Mix (we used lemon lime), 2 packets of Wellness Hydration, 3 cups water, 1.5 cups tequila. Mix and enjoy!
Jake went on a bike ride after work, but when he got home, we ordered food from La Paloma and chowed down. Everything was SO good.
Cheers to Cinco de Mayo! Alex brought her pups over, which our pups loved. They all played SO hard and wore each other out.
