I mostly have pictures of food from Thursday, which is how you know it was a busy day. After my run, I came home and had breakfast. I love this breakfast because it keeps me full until lunch time – oats, massive egg scramble, and lots of coffee!
I spent the morning on my computer, then took a break for lunch. I threw my tilapia filets on a tortilla with hot sauce and chowed down. I LOVE topping my veggies with nutritional yeast. It adds so much flavor.
Lu never strays far from my side when I’m working in my office.
After lunch, I mowed our yard and cleaned the house, then curled up to finish my book. It was so nice to relax for a little bit. Jake got home from work and we went on a drive around town, then came back home for dinner. I made myself a massive smoothie and Jake had BBQ chicken.
I slept in a little this morning, so I needed something quick for breakfast because I had a morning meeting. I love this cauliflower “oat” mixture. Yon can’t even tell it’s cauliflower. I added a little peanut butter and some egg whites to mine. I added the egg whites before cooking and the PB when it was finished. SO good.
My Mom and sister are coming over for coffee late morning, so I am excited to spend some time with them. We have dinner plans with Jake’s family tonight, too, so it will be wonderful to see them. I have missed our families so much. I have a 12 mile run Saturday, but other than that, I don’t think we have anything crazy going on, which I love!
