Sometimes forced cuddles are the best cuddles.
I had a doctor’s appointment yesterday, so I rocked my mask.
Lunch yesterday was a taco salad with ground turkey, a little leftover ground beef, and tortilla chips on the side. YUM.
After lunch, I spent most of the afternoon in my office working on my computer. Rhea made herself comfortable under an open part of my desk. She eventually fell asleep here and stayed there for a couple of hours. We are still waiting on the results of her genetics test – I will share them as soon as we have them! She hasn’t had another tremor/seizure, so we are thankful for that!
Have I mentioned how obsessed I am with my new desk? SO obsessed. I am working on building one of my summer classes right now – it’s so much fun finding articles and podcasts for my students to use this semester.
Jake ran errand with his Dad after work, so they grabbed dinner together. I was feeling lazy, so I made one of my go-to easy meals – a sheet pan meal. I just cut up two turkey sausage links, dumped a bag of frozen veggies on a sheet pan, put a little seasoning and coconut aminos on everything, then baked at 350 for 30 minutes, stirring halfway through. That makes enough for two meals, so I have leftovers. I topped mine last night with nutritional yeast and chowed down.
I have never been a huge gin fan, but Jake grabbed this for our Moms on Mother’s Day and it is incredible. It has a hint of citrus, which I love. I’ve been mixing it with Lemon Bubly and it makes the most delicious, refreshing drink.
I am still loving my AirRelax recovery sleeves. I was super sore after a cross training class, so I used these after dinner last night. I woke up not feeling sore at all! They’re a game changer.

We don’t have any crazy plans this weekend, which is nice! I’d like to get 15 miles in Saturday morning, so we will see how that goes. My run last weekend was terrible, so I am ready to try again. That’s what I love about running – one day can be the WORST and the next is WONDERFUL. Each run is a new chance…sometimes each mile is a new chance.
For now, I am off to spend the rest of the day working on my summer course!
