A lot of food + busy + a late night date.

As soon as I finished my run Tuesday morning, I roasted some veggies for breakfast. When they were cooked, I made a bowl with sliced carrots, beets, brussels, two eggs, and two strips of bacon. It was delicious. To roast the veggies, I dumped a bag of frozen carrots, broccoli, and some fresh brussels into a baking dish. I topped everything with ghee, a Cajun seasoning, black pepper, and garlic powder. I baked everything at 350° for 30 minutes, stirring occasionally. So easy!

I was still hungry when I finished that bowl of deliciousness, so I had a slice of my paleo banana bread with butter. YUM.

Jake and I ran some errands Tuesday afternoon. While we were out, we grabbed lunch from Nearly Famous – one of my favorite places here in town. I LOVE their quiche and salads, which is exactly what I had.

I spent most of Tuesday working, took a little nap, and did a short lifting workout. Jake and had a few things to do Tuesday evening, and before we knew it, it was 8 o’clock. Since we were out, we grabbed a quick dinner at La Paloma. They have the BEST skinny margaritas
