A little house work + black bean brownies + a few life hacks to make things easier!

Breakfast Monday morning: an egg and veggie scramble, half a bagel with almond butter, chia seeds, flaxseeds, and honey, and meatless patty. This hit the spot!

I spent the morning doing laundry, meal prepping, and getting caught up on computer work. Lunch was a quinoa burger patty on sourdough, topped with ketchup, avocado, and spicy banana peppers with a salad on the side. YUM.

We had these for lunch and they’re delicious! They have other flavors, too, so I really want to try some of them.

This week is opening week at UA Little Rock, so I have lots of new faculty meetings. Yesterday, I had an HR Zoom meeting. Today, I have a new faculty orientation (virtually) from 9AM-4PM. It’s going to be a long day, but I can’t wait to learn more about my new job and meet some other new hires.

After my meeting, I headed to the new house to finish cleaning the kitchen. Since we will live in the house with the kitchen for awhile, I want to make sure it is as clean as possible. I tackled the double ovens…pictures do not do them justice. They were pretty dingy looking. I use a Magic Eraser and got everything looking new again! These are the before pictures, but you can’t really see the dirt.

In case you were wondering how wallpaper peeling was going…not great. Thank goodness we don’t have to peel the entire house. We will be knocking down some walls eventually, so those will stay wallpapered until we do that. This room will be my office and have my treadmill and our bike trainer in it.

My parents met me at the new house and when we left, Lu rode with my Dad, so this little lady got to ride in the front seat with me. She loved it. Also, my Mom is a rockstar. She deep cleaned the bathrooms in the new house…she was on her hands and knees cleaning. I am SO thankful for her and her willingness to always help. Thanks, Momma!

I grabbed a quick dinner with my parents at Niji, a new sushi place near us. It’s delicious.

I made some black bean brownies yesterday. I sent some with my parents and some with Jake for the guys at work. We LOVE these. I followed THIS recipe.

Here are some of my favorite hacks for around the house – I am so ready to be back in a house to use some of these!

We used these bins for all of our recycling at the old house and we will use them at the new one, too. We ordered two sets of these to have six total and it worked perfectly for us. We had two for plastics, one for glass, one for paper, one for cans, and one for aluminum. These fit perfectly in my car, too, so they’re super easy to take to the recycling center and empty out.

I use these in our pantry and love them. I like these because they have a partition that keeps items separate and/or standing up straight (like tuna packets).

This is the frother I use for protein coffee, adding collagen to liquids, or frothing milk in my coffee. It is probably the best frother I have found. Plus, it’s cheaper right now than when I purchased!

This is what I soak my produce in before we eat it. I usually fill up my sink and put in 15-20 drops and let everything soak for 10-15 minutes. I always rinse when I am finished. Also, I don’t know why, but they say to not use this wash on mushrooms. Anyone know why?

THIS IS THE BEST. I have one of these under our bathroom sink and one in the kitchen for spices. I think this is one of the best organizational items in the entire world. It is adjustable, so it can be made to fit in a lot of different spaces. Hands-down my favorite.
