Thank God for cardio + pretending + make this easy dinner!

A little cardio is good for the soul! I knocked out 45 minutes of elliptical time before doing a little lifting. I was rushing around since I somehow turned my alarm off and needed to finish my workout before my virtual office hours, but I knew I’d regret it if I didn’t prioritize a workout.

I finished my workout, had breakfast, and hopped onto my computer for office hours. It was a productive morning!

After office hours and a little work, I took the girls on a two-mile walk. The weather was incredible, so I wanted to get out and enjoy it. A little more work and lunch came after our walk – another day, another taco salad. YUM.

After lunch, I did a little more work, then headed out for my massage. I went to Acacia Spa, which is close to our apartment, so I just walked there. My birthday massage was incredible. I felt so much better after it.

After my massage, I worked some more, then made a quick dinner – plant crumbled ground beef, peas, mushroom, spaghetti sauce, a little ghee, garlic powder, and balsamic vinegar. SO. GOOD. We had this over rice and it was phenomenal. I need to remember this recipe! It made enough for four servings, so we will have it as leftovers. Win-win! I just let everything simmer together for 10-20 minutes. That’s it! So easy.

YUMMM. If something has balsamic vinegar on it, I am going to love it.

Kayla stopped by to bring me some pineapple beer she found in Arkansas, so we made drinks and pretended we were at Galloway. Is that how you know you love a place too much? ; )

I guess we weren’t entertaining enough to keep Rhea awake…

Off to start on some work for the day!
