The best chicken salad + I finished the room! + I fell off my bike…

I love this breakfast casserole. It’s the perfect mixture of deliciousness. We only have two pieces left, so I need to figure out breakfast for the rest of the week…maybe back to burritos. You just can’t go wrong with burritos.

I made the best chicken salad….ever. 4 chicken breasts, 1 cup of plain Greek yogurt, 1/2 cup sour cream, poppy seeds, craisins, and garlic powder. So. Dang. Good. I would’ve added celery, but I forgot to get it at the store. I ate mine over a bed of spinach and Jake had his on a wrap with spinach.

I finished some work and headed over to our new house to get a little run in before I worked on the final room of wallpaper (that we are removing right now, some of the wallpaper will stay for a little bit since we are knocking down a few walls). I love this cooler weather. I wish it was like this all the time.

Chicken salad over spinach before I FINISHED our last room! Wahoo! That sure felt good. Now to sand a few spots in this room, have someone come and spackle a few spots in another room, then we will prime, paint, get the carpets cleaned, and move in!

The. Best. Salad. I had forgotten about this. My Mom used to make it all the time. Coleslaw, dry Ramen, and the most delicious dressing (1/2 cup oil, 4 TBS vinegar, 2 TBS rice vinegar, packet of seasoning from Ramen, and sugar (just add as much as you like…the recipe calls for 1/4 cup but I think that’s too much…I think I added 1-2 TBS)). I added coconut aminos baked chicken to the top, too. YUM.

We don’t have many Monday night rides left, so we are soaking them up while we can!

I took this after I very gracefully (awkwardly) fell off my bike. Buuuut, this fall didn’t make me cry or get irrationally angry, like every other fall before this, HA! I guess that means I have finally embraced the awesomeness that comes with riding. I know Jake loves reading that! Plus, how can you beat these views??

Little baby battle wounds. My leg got caught in my pedal, other than this and little scratch on the leg I fell on, I’m all good.

Jake was working on a light by our apartment, so I threw together dinner for him and the girls and I delivered it. Jake has worked some crazy hours the past few days, so we are both excited for him to be off work Tuesday and Wednesday.

I am off to run, then will probably be on my computer the rest of the day. I have a couple of meetings and need to knock out some grading.
