When your body is tired + a little week day meal prep + an interesting podcast!

My body is tired this week. My watch has told me since Tuesday that any activity I do is “unproductive.” I don’t know how accurate that it, but I definitely feel tired, so today will be a rest day for me. I think I need it! I knocked out 6 miles before going to AYB for leg day. I was whooped after knocking out those two things, but it felt SO good to run in the sunshine and lift a little heavier this week than last week.

Breakfast happened immediately when I got home.

How gross is this? I’ve been cleaning the mouthpieces on some water bottles of ours and it’s just nasty. We had four that had mold EVERYWHERE. It was disgusting. You can see all the black pieces that have come off of the mouthpieces. I soaked these in a bleach and baking soda mixture overnight. They looked brand new after soaking! After soaking them in the bleach and baking soad, I soak them in a mixture of warm water and dish soap before running them through the dishwasher. I want to make sure all of the bleach is gone before we use them again. I need to this at least once a year. I think I use about 1-2 cups of bleach and 1-2 TBS of baking soda….you know I don’t measure things.

I had two meetings yesterday – one was with two of my colleagues and we took a practice test that our reading specialists will take. It was kind of fun to go through this. I was also reminded how thankful I was to not have timed tests to take anymore…

I did a little meal prep because Jake is picking up TWO doubles the next few days. Yes, he is crazy but we love him. I made a massive spaghetti squash and veggie casserole. I layered all the cooked ‘noodles’ from one spaghetti squash on the bottom, topped that layer with spaghetti sauce, a little balsamic vinegar, two chopped zucchinis, and two bell peppers, and dairy-free provolone cheese. I topped all of that with another layer of cooked spaghetti squash noodles and more spaghetti sauce. YUM. One suggestion – cook your zucchini before adding it to this. Ours was still a little too hard after baking it. I wanted to add mushrooms to this, but ran out of room. It’s also super good with ground turkey, chicken, or elk.

Bake at 350 for an hour. I would cover it with foil, too.

Here’s what went into ours! Each serving is under 300 calories, which just goes to show how full you can get eating veggies. I was stuffed after eating my portion.

After my second meeting, I hopped into an Epsom salt soak and listened to the newest podcast from AYB (my gym). This one was super informative about booze and I enjoyed it a lot. I didn’t know that white wine tends to be lower in alcohol content than red! I’m not a huge white wine fan, but I still found that interesting. I have been trying to up my protein intake, so I added some tofu from the AirFryer to my spaghetti squash and veggies for dinner. YUM.

Jake got these for a camping trip last week and I cannot stop eating them…

This is what most evening look like in our house…Rhea always rests her head on something. I washed. dried, and put away 5 loads of laundry and brushed Rhea. That’s a full evening! ; )
