Team Breakfast + I ran out of boxes…+ I love feedback

I love breakfast food. So much. This week, we are having sausage links, half an everything bagel, and an egg scramble with mushrooms, spinach, and dairy-free cheese.

Before I went to the gym yesterday, we stopped by the paint store. We are going to paint our fireplace! Since everything in our house is/will be white, we want to add some color to the fireplace. It’s been so fun looking at options. I think it’s going to look so good.

I went to the gym, then knocked out a bunch of grading. The fall semester ends next week, so I am trying my best to get grades updated as soon as I can. We officially move (have to be out of the apartment on the 17th) the day before grades are due, so I would love to be able to submit my grades before then…we will see! Lunch was a leftover burger from The Rock and a salad.

After lunch, I met Jake over at the house and we worked for a couple of hours. When we finished over there, I came back to the apartment to pack a little more and make dinner. I have packed up most of our kitchen, so we are having a lot of sandwiches/wraps, but this dinner was super quick and easy to make – healthy doesn’t have to be hard! The okra and salmon were both frozen and the grains were microwavable. Super simple. I think this took me maybe 15 minutes? I cooked the okra in ghee and coconut aminos, and the salmon was topped with ginger, garlic, and a little bit of coconut aminos.

All the packing. All the chaos. I couldn’t remember the last time I washed my hair, so I hopped in the shower after dinner, then got back to packing. My hope it to have everything packed up by Sunday/Monday. I ran out of boxes last night, so I need to go to our storage unit to grab some more later today. I am glad we saved all of them from when we moved 6 months ago…

My student evaluations from my summer and 7-week fall courses were sent to me yesterday. I really do like evaluations. I take them to heart and use student suggestions to tweak things. I don’t always get good reviews, but I appreciate both the good and the bad. I had all positive reviews from my UALR students, which made me feel good. I love hearing what knowledge students walk away with…it makes me happy when they share their “aha” moments from my courses. Anyway, I sent the comments to my parents because they have always enjoyed reading what my students say about me (before getting my full-time professor job, I taught as an adjunct for 6 years). My Mom said she screenshotted some of the anonymous comments, HA! Her comment reminded me of my Grandma. She was always SO proud of us, no matter how small the accomplishment. She really was something special.

We finished up packing for the evening around 7:30PM and crawled into bed to relax. Rhea kept me warm with her cuddles.

Then it was up at 4AM to meet these babes for some chilly miles. I have been struggling to get up to run on my own, so I was extra thankful for our little group this morning. Rhea was with us, too, but she didn’t want to be in the picture.

I was SO hungry (story of my life) after my run, so I made breakfast as soon as I got home.

I definitely prefer turkey sausage, but I saw this at Mama Jean’s and wanted to give it a try. It’s not bad! I wish it had more of an apple flavor, but other than that, I liked it.

I think Rhea wanted to knock out a few more miles…

I’m off to the gym in a bit, then have a meeting, then it’s house time! I found a bunch of before pictures and I can’t wait to share them with you. It’s crazy how much our house has changed in the past few months…this time next week we should be moving things over there…fingers crossed!
