Weekend Wrap-up!

This weekend was wonderful. Lots of good food, a long run, a bike ride, a little work, and a whole lot of relaxing. We have been trying to up our veggie intake a little bit, so I made a huge casserole Thursday afternoon with spaghetti squash, broccoli, peas, and mushrooms. It was pretty dang delicious. I mixed in a little bit of Italian dressing and topped it all with parmesan cheese.

I added a little tofu to mine and it was SO good.

Friday morning started with a delicious breakfast before heading to the gym. This sweet potato toast hit the spot last week.

Friday afternoon was perfect for a bike ride with these hoodlums. It was chilly, but sunny, so we bundled up and hit the streets.

Post ride nap, complete with cuddles from our 40-pound lap dog.

We have been chowing down on these the past two weeks and I think they’re a new favorite. The garlic and herb flavor is amazing.

Dinner Friday night was pizza and salad from The Pitch. Kayla came over and we had a very lazy, relaxing evening.

Kayla also brought over cake. I will never turn down cake. This was from Star Cakes – so delicious.

After Kayla left, the girls and I cuddled on the couch until bed. It was my kind of Friday.

Saturday morning started with 12 miles in the sunshine. I ran two on my own, then met these girls to finish up. SO incredibly thankful for this bad ass group of women who inspire me every single day.

Mama Jean’s got bigger cups for their smoothies! WAHOO! They’re now as big as my head. I love their smoothies, but they’re so tiny. I always want more.

Our dang washing machine died on Friday, so I took all of our laundry to the laundromat Saturday after my run. It was so nice to get four loads of laundry washed and dried in about an hour!

I was SO tired after my run, so I spent a lot of Saturday on the couch with my babies.

Jake and I had the best date night Saturday when he got off work. We ran to Harter House and got some crab stuffed mahi mahi and twice baked potatoes. Jake grilled all of this deliciousness and it was SO good.

Jake’s plate was prettier than mine. I didn’t feel like a salad, but everything was so, so good.

If you like sours, get this beer. It is amazing. Definitely one of my new favorites.

Slightly spoiled…we watched Rocketman Saturday night and loved it. It’s a great movie if you’re needing something to watch! I promise Lu sleeps all the time and it didn’t have anything to do with the movie. ; )

I had a lazy start to my Sunday, which is my second favorite way to start the day. My first favorite is with a run. I made an oat milk latte and lounged in bed while I enjoyed it.

I also had breakfast in bed – two egg muffins, sweet potato toast, and half an avocado. I made super easy muffins for the week and they’re delicious – they have mozzarella cheese, mushroom, and ham. YUM.

After breakfast, I vacuumed and did computer work. Lunch was a burrito I found in our freezer. I topped it with plain Greek yogurt, jalapeños, and a little Sriracha. After lunch, I scrubbed our bathroom, laundry room, and kitchen floors.

Jake stopped by for lunch. I was holding Rhea and he put Lu on top of her. I don’t think they loved it…

The best kind of rainy Sunday – all the cuddles, all the blankets. Can you spot Rhea?

Friends, I have a new recipe that you HAVE to try – spaghetti squash pizza crust. I kind of followed THIS recipe (if you’ve been following for awhile, you know I never really follow a recipe…). I just cooked the spaghetti squash in the over a few days before, mixed together one egg, half a cup of parmesan cheese, some garlic powder, and basil, halved the mixture, and placed one half on a pan on the stove and flattened it. I cooked on each side for about 5 minutes – I just flipped each crust in the pan on the stove, then transferred them both to a sheet pan to put in the oven because I think my skillet is still in our storage unit. I cooked both crusts with everything on them (tomato sauce, turkey pepperoni, and cheese) at 350 for 12 minutes. That’s it! SO delicious.

I topped them with balsamic glaze and Sriracha and chowed down. We will definitely have these again.

It’s a new week and our last one in January…so crazy! Make it a good one. : )
