I wanted to get 8 miles in Wednesday morning, so I figured a little speed work would do the trick. If I mess around with speed or the incline, it really helps make treadmill miles go by quickly. It was so nice to have the sun shining, even with all the snow on the ground.
Here’s the workout I did! It was awesome. I want to remember this and do it again in a few weeks to test progress after I’ve had some more time to work on speed. This was 8 miles with a 2 mile warm-up and half a mile cool-down.
I had a bagel before I ran, so after my run, I enjoyed two egg muffins with salsa.
I attempted to stretch and foam roll after my run, but Rhea makes it a little difficult to do anything on the floor…
Sometimes you just need two laptops…work and play at the same time!
Third day of a grilled cheese. My favorite dairy-free cheese works perfectly for a grilled cheese. Some DF cheeses don’t melt very well. The one I love is the Almond Pepper Jalapeño Jack by Lisanatti Foods. Highly recommend if anyone is looking for a good DF cheese.
I did a little work after lunch, then got some cuddles in with my littlest love.
Sometimes I like apples and sometimes I don’t. Yesterday, I was craving one. I like to eat them in slices sprinkled with brown sugar and cinnamon.
I had my first Air Fryer mistake last night. I was trying to make a quesadilla, but the top half flew up while cooking and super SUPER fried, so it was like a tortilla chip. HA! Oh well. It still tasted amazing. I’m not sure how to make sure it stays down…toothpick? I’ll try that next time.
I knocked out a run this morning, finished packing, and am getting ready to get outta here! I am meeting Jake for a little getaway (he’s already out of town). It has been WAY too long since we had taken a vacation, so this is much needed. I will try to post every day, but no promises. 🙂
