I enjoyed breakfast in bed yesterday morning. I love having breakfast ready to go each day. These egg sandwiches have been delicious. They have a gluten-free English muffin, one egg, on turkey sausage patty, and a slice of cheese. I will fry a bunch of eggs, cut open the English muffins and spread on a baking sheet. Then I layer everything on the muffins and bake at 350 for about 15-20 minutes. I usually get turkey sausage that is already cooked, that way everything doesn’t have to cook as long.
I spent the morning working on my computer while Jake worked on some plants in our sunroom. Some of our poor plants did not get enough sun in our apartment, so we’re trying to nurse them back to health. We took a break for a little lunch date. More egg salad sandwiches.
We’ve been having a cut-up banana with peanut butter, cinnamon, and honey on the side. It’s basically a dessert. YUM.
After lunch, it was back to work. The next few weeks are a little crazy as the semester ends and the school year comes to a close. I have some pretty important meetings/presentations, so I’ve been trying to prepare for those. Sweats all day unless I have a meeting, then I’ll throw a nicer looking top on.
We grabbed dinner at Millwood last night. I was craving a burger. They also had the most delicious appetizer – Swiss cheese fondue with caramelized onions and bacon….WOW. It was amazing.
One of the TVs wasn’t working, so Jake hopped behind the bar to work on it. I call him Mr. Fix-It because he can fix anything. I think this TV ended up needing to be replaced, but Jake gave it his best effort.
I have an alllllll day conference today, 9-3:30, a meeting from 3-4:30 (I’ll have to miss out on something since there’s overlap between those two), and a participant interview this evening. That’s on top of all my normal work, so it’s a full day! I didn’t sleep well last night, so I didn’t get up to run early. I would like to squeeze in a run at some point, so we’ll just see what I can make work. Here we goooooo!
