This breakfast casserole is SO delicious. Monday morning was our first morning eating it…yummmm.
It’s only 4 ingredients! Biscuits, eggs, cheese, and whatever protein you want. Bake at 350 for 30-40 minutes or until firm – that’s it! This made 8 servings for us.
It was leg day at the gym yesterday. We do 9 week cycles and are nearing the end of the current cycle, so we are starting to lift heavier. I hit two PRs, which I was really excited about. 115 lbs on back squat and 145 lbs on hip thrust. I’m trying to do a better job of remembering what weight I’m lifting. I always forget and then am either too low or too high. When I got home from the gym, the girls and I went on a 1.5 mile walk. It was started to get a little toasty out, but the sun felt amazing.
One of my favorite snacks – graham crackers with peanut butter. I spent the rest of Monday grading. I can’t believe my semester is over on Sunday! It’s crazy to think that my first year in this new position is coming to a close. The year has flown by!
This lunch is out of this world. Chickpea gyros – yes, please. Stuff a mini pita with roasted chickpeas and homemade tzatziki sauce, then top with cucumbers, cherry tomatoes, red onion, and feta or goat cheese. WOW.
I had a major recipe fail last night. I attempted to make THIS recipe, but the mixture didn’t set-up correctly. When I went to roll them into balls and cook them, they didn’t stick together very well.
The recipe is for Chicken Pineapple Poppers. I’m not sure what needs to be added to these to make them stick together better, but they are delicious nonetheless. If you know what else I can add to make these stick better (maybe egg?), please let me know!
The poppers kind of stuck together after cooling off, but this meal turned into more of a bowl of cauli rice, veggie rice, the poppers, and goat cheese. It was SO good.
If you have heartburn, but have been looking for an all-natural remedy, this Acidil is amazing. Kayla told me about this stuff last weekend and it works SO well. I found this at Walgreens, but there’s also a link below for you.
I went to the gym early this morning because I have a meeting during my normal gym time. I came home and chowed down on breakfast – casserole and Kefir yogurt with collagen. I have a bike ride later, so I’m not sure if I will run before that or not…we all know what happened last time I ran, rode, and lifted….mental breakdown. Soooo, we will see how the day goes! ; )
