Weekend Wrap-up!

We had such a fun weekend! We got to celebrate my Mom’s birthday on Saturday, which was a blast. Friday morning started with a little breakfast burrito action – YUM.

I honestly can’t remember what I did on Friday, I think I did a little computer work and read a book, but that’s about all I can remember. I had dinner with my parents that evening. My Mom shared the recipe below that she made recently and both my parents really liked. It sounds delicious! I’m going to have to try it out. My Dad grilled brats, which were delicious. I used to dislike sauerkraut, but now I love it. I think it is so interesting how our tastes change.

Saturday morning started with a little cereal in bed.

I needed to grab some more dog food early Saturday morning, so while I was out, I grabbed a latte from Dancing Mule. I can’t remember the name of the latte I had, Sweet Roll or something?, but it was SO good.

The girls and I got a walk in. It was crazy humid.

Lunch was one of my favorite frozen burritos from Burrito Kitchens.

Dinner on Saturday night was at Vineyard Market to celebrate my Mom’s birthday! We all shared a massive charcuterie board, which they had waiting on the table for us when we arrived.

I had one of their calzones and it was amazing. And massive. This was definitely enough for more than one meal.

My Dad got my Mom a karaoke machine and it is SO cool. We had a blast singing and being goofy after dinner. I am pretty much the only person in our family who is a terrible singer. I wonder if that’s why I didn’t get to sing a song of my own…. ; )

It was pouring Sunday morning when we got up. Once there was a break from the rain, we headed out for a short walk.

One of the best snacks of all time – PB on Graham Crackers.

We got in some couch cuddles, too. Can you spot Rhea?

Dinner Sunday was a Chicken Zucchini Pasta Skillet and it was incredible. Plus, super quick and easy to make, too. I kinda followed THIS recipe. We use some chickpea/lentil noodles and they were super good.

Topped with parmesan cheese and a little Sriracha – yes, please!
