We got our daily 5k in yesterday morning. I didn’t go to the gym yesterday because I slept at my parents’ due to the oil-based primer fumes and didn’t want to be rushed in the morning. When I got home, I had coffee and breakfast, then the girls and I headed out for our walk.
Family photos are difficult for everyone. This made me laugh.
Lunch was a turkey burger patty on a piece of sourdough bread, topped with Pepper Jack cheese and honey mustard. YUM. I also had some broccoli on the side. This broccoli is SO good. I did an egg wash on all of it before baking, then dipped each piece in garlic powder, Slap Ya Mama seasoning, and bread crumbs. I baked it at 400 for about 20-30 minutes, then put some cheese on top to melt. It’s delicious!
I discovered dill pickle chips yesterday. I feel like I’ve been missing out.
Dinner was leftover sweet potato chili, topped with plain Greek yogurt, corn chips, cheese, avocado, jalapeños, and black pepper.
We went for a little family stroll after dinner. We were both so tired, but needed to knock out a little more work, so we hoped a walk would wake us up a little. It didn’t, but it was nice to walk together for a little bit.
Guys, I followed a recipe! I usually do when I’m baking something. I followed THIS recipe to make breakfast for the rest of the week – Zucchini Blueberry Oatmeal Bake. I haven’t tried this yet, I’ll eat as soon as I get this post up, but this sure smelled AMAZING as it was baking. Here it is ready to go into the oven.
While that was baking, Jake and I tackled the sanding in our living room. Remember when we completely finished this room? Yeah, us too. We decided we didn’t like where one of the lights was placed, so Jake cut a hole in our freshly painted ceiling for a new light, mudded over where the old light had been, and fixed a small imperfection he found. The joys of remodeling your own remodel!
The light on the right is the new one. The one that is hanging down on the left is where Jake found an imperfection he wanted to fix. The hole we filled is somewhere in-between the two. Now to prime and repaint the ceiling. We will also be moving our TV to the fireplace – Jake will build some kind of pipe contraption to house all the cords. It’s going to look so cool.
We didn’t make too big of a mess…I think we need to vacuum and dust this room about four more times…
This smelled SO amazing. It finished baking right about the time we finished the living room. I let it cool off, then we crawled into bed.
I only have ONE meeting today! Wahoo! It was so nice not having a single one yesterday. I was able to get so much work finished.
