The best veggie sandwich + maybe October will be slower? + 20 weeks today!

I saw these bad boys when I went to Price Cutter to get vegetables, so of course I had to get them. They are AMAZING. Pumpkin Snickerdoodles. I had one the second I got back to my car.

A veggie sandwich sounded good to me all day Wednesday, so that’s what we did for dinner. These were incredible. I got some fresh baked jalapeƱo cheddar bread from Price Cutter’s bakery (it was phenomenal), then we layered on mayo, cheese, mustard (honey mustard for me), green peppers, cucumbers, tomato slices, red onion, and more cheese. These were massive.

I also made a big batch of guacamole. I love to add plain Greek yogurt to my guac. It makes it extra creamy.

Best. Veggie. Sandwich. Ever. I definitely had heartburn after the spicy bread and the pepper jack cheese and three pepper cheese I put on these, but it was worth it.

I am STILL reading this book. I love it, but have only been able to read about a chapter a night, so it’s taking me awhile to get through it. I think I also went about a month without reading at all. I am over halfway, so maybe I’ll get some downtime this weekend to read for a good chunk of time.

Thursday morning started with my fourth day in a row of going to the gym early. I miss the girls from my normal class, but I really like everyone in the earlier class, too. Plus, it’s so nice to knock out the gym before starting my work day. After the gym, we did part of our daily 5k.

Jake has a hundred this weekend. I am SO excited for him. He’s going to crush it. I made a massive pasta bake for him to eat on all weekend. This has pasta shells, cheese, mushroom, green peppers, pasta sauce, and Italian sausage. I love making this in bulk and freezing some of it. I need to start thinking about meals to make and freeze for when baby boy gets here…do we need a deep freeze?! Maybe…

I had two conference sessions Thursday morning, so I squeezed in lunch when they were over. Another massive veggie sandwich and my favorite brussels.

I think the key to a great veggie sandwich is lots of cheese and mayo.

I cannot believe we are halfway through this pregnancy as of today. I slept in this morning – I think Jake and I both slept about 10 hours. HA! He’s going to go into his hundred very well-rested. I woke up to my pregnancy apps (I have three…) telling me congratulations on making it to 20 weeks! I still feel a million times better than I did in the first trimester. I am steadily gaining weight – I feel like my arms have ballooned, and I have lots of heartburn, but other than that, no crazy symptoms. I will occasionally get nauseated after dinner and sometimes have round ligament pain, but no complaints from me. I think I am feeling him move every night when I lay on my side to go to bed, which I love so much. Jake can’t feel him yet, but hopefully soon. I have an anterior placenta, so that can keep us from feeling his movements.

Sweet baby boy is the size of a beanie baby. Our next big appointment is our anatomy scan early next week. I cannot wait to see little dude again. It will have been two weeks since we last saw him. I know that’s nothing, but when you’re used to seeing your baby every week, it’s so hard to go longer than that. SO, so thankful we have gotten to see him as often as we have. We would appreciate prayers that everything is developing like it should! <3 We are beyond grateful for our prayers warriors. Thank you, thank you!

September as a whole was pretty bonkers, so I’m hoping October slows down a little bit…we’ll see! I also cannot believe it’s October. I love fall so much. I told Jake I want to go to some fall festivals this month. They’re always so much fun. If you know of any that we should check out, please let me know!
