Sunshine + baby B is getting spoiled + pizza roll-ups!

Early morning gym time and coffee – my favorite way to start the day. My days seems to go much smoother when I’m able to knock out the gym early. I love the later class, but I usually end up sleeping in too late when I go to that one and then I feel groggy all day.

We are enjoying the sunshine on our daily 5k walks.

Lunch Monday was a leftover burger, beer bread with apple butter, and broccoli cheddar soup. This soup is a great way for me to get some veggies in since I’ve been struggling with that the last few weeks. I also think my appetite is coming back, thank goodness!

Lu has always slept in the strangest positions…she has her little head wrapped around one of the legs of our couch…

I cannot stop eating Granny Smith apples and caramel dip. It is SO delicious.

I had a package waiting for me Monday evening and could not figure out what it was. All kinds of amazing things for baby Bradley were inside! Thank you, Dawn and Mitch! I cannot wait to see him in all of this. This gift made my day! <3

Dinner Monday night was pizza roll-ups. These are made up of crescent rolls, pizza sauce, spinach, mushroom, cheese, and pepperoni.

I was so excited for this. So was Lu, but I definitely didn’t have any left over to share with her.

In case you can’t see the picture clearly, this is what it says: I have gotten so many requests for the pizza roll-ups recipe. Surprise, surprise – I don’t really have one, but I’ll tell ya what I did! I used crescent rolls because I couldn’t find pizza dough & I didn’t want to make it from scratch. So, if you can find pizza dough, I think that would make these easier, but the crescent rolls work. I split two containers of crescent rolls in half and laid them out flat. I then layered on pasta sauce, mushrooms, spinach, pepperoni, & cheese slices. Once you have everything on the crescent rolls or pizza dough, roll them up! The crescent rolls can get messy, so I had a greased baking dish super close nearby so I could immediately transfer the rolled up pieces to it. Bake at 350° for 30 minutes. You can add more time if you add more filling to these. But that’s it! So simple & they were DELICIOUS!

Poor Jake worked 24 hours Monday, so he didn’t get home until about 7:30am Tuesday morning. I had gone to the gym and gotten back home before he was home from work. He showered and immediately crawled into bed to sleep. The girls and I joined him and napped for a little bit, too. It was wonderful. I love family naps.

Lunch was more broccoli cheddar soup and beer bread.

This book has been recommended to me by multiple people AND I listened to a podcast episode with the author, Emily Oster. I am excited to jump into this and learn. From what I have heard, Emily presents ALL kinds of research on different topics and explains it WITHOUT using her opinion. She focuses solely on facts, which I love (and we need more of in our world, but that’s a topic for another day…) I will let you know what I think once I get into this.

I had one meeting yesterday, but it just happened to hit at a time when I was starving. I have finally started telling colleagues that I am pregnant, so they shouldn’t be surprised now when I’m either eating, drinking, or getting up to use the bathroom in the middle of our meetings.

We had pizza roll-ups again for dinner. This was Jake’s first time having them since he worked through the night Monday. He loved them, too!

We had a family movie night last night and watched the new Fast and Furious movie. It was SO good. I love when Rhea watches TV with us. She is always super concentrated on the screen. I told Jake we need to watch ALL the Fast and Furious movies from the beginning. I don’t remember everything that has happened.

I think this is another book from my Mom. I just started it last night, so I’m only on the third chapter, but it is really good so far.

I have a crazy day today with back-to-back meetings from 9am until 4pm, so I’m not sure what all I’ll be able to get accomplished, but I hope to be able to knock out some work somehow. I am itching to get our windows finished so I can start setting up the nursery…I HOPE to have the nursery almost finished in the next month…we’ll see what happens.
