This handsome dude was boycotting nabs on Monday. We attempted one in his crib. I swear by the sleep suit and his Owlet.
This is my current favorite snack. A banana chopped into bite-size pieces, peanut butter, honey, and flaxseeds. I’ve been eating it every day and it is so delicious.
Dinner Monday night was salmon filets and sautéed spinach. I had forgotten how much I love sautéed spinach. I just cook mine in ghee, salt, pepper, and a little garlic , then top it with nutritional yeast. So. Good.
These are the best plantain chips I have ever had. We have already gone through three bags of them since I discovered them last week. I got them from Hy-Vee here in town.
After breakfast Tuesday, we got ready to head out for my workout run. Since it’s been so hot, I’ve been trying to get up a little earlier to knock out my run on days when I have the stroller. We were out the door by 8am yesterday and ran in mostly shaded spots, so it wasn’t too bad.
Ready to run! All he needs is a good crinkle book and a burp cloth. He loves to hold onto his burp cloths.
This was tough, but also felt so good. Workout runs are much harder with pushing the stroller.
He fell asleep before I was finished with my warm-up and slept through most of my run.
After my run, I threw dinner in the crockpot. This pork shoulder would soon be Carnitas meat.
I checked my email and did a couple of things around the house before having lunch. These bowls are delicious – Quinoa, broccoli, green beans, steak bites, and chicken.
He’s too cool.
I was getting ready to knock out some work when Cooper got a little fussy because it was time for a nap. I rocked him to sleep and then did not want to put him down, so I worked and cuddled. I will never take this for granted.
He cracks me up. I guess this is a hands-free chew toy…
I ordered him this Kleenex box with different crinkly sheets that he can pull out of it. He loves it. We played with this for a long time yesterday.
Dinner last night was Carnitas taco salads with skinny blueberry margaritas. Yum! The salads have Carnitas meat, spinach, carrots, tomatoes, sweet corn, crispy onions, avocado, plain Greek yogurt, and salsa.
Coop always grabs the side of his changing table whenever I am changing his diaper. It makes me laugh. I guess he thinks he needs to hold on…
This kid has officially outgrown his bassinet in our room. I am not okay. He’s still okay on the weight limit, but I think he’s definitely running out of room. I don’t know what to do next. I’m not ready to put him in his crib…
I think this is my favorite view of our house now. The charcoal bricks look so cool against the black windows of our sunroom. Next up, landscaping! Since it’s been so hot, we will probably wait until fall to plant anything, but it’s going to look so cool.
