Double date nights (plus Coop) + ya gotta make it work + easy meal prep!

We had such a great weekend. Poor Jake ended up with some terrible poison ivy, but other than that, we had the best few days together. Little man and I headed out for a recovery run Friday afternoon. I don’t know how we got so lucky with this dude.

After my run, I headed to PT and then met my boys at Great Escape for a beer.

We had a date night with Kallie and Coty on Friday, so they came over and then we headed to Cesar’s for some delicious Mexican.

After dinner, we all headed to Jake’s parents to hang out with them for a little bit. Cooper was up waaaaaay past his bedtime, but he played the entire time and loved snuggling the pups.

We slept in Saturday morning, which felt amazing. Cooper loves looking out any windows.

My cutie parents were in Iowa for my mom’s college reunion. While there, they went to a Hawkeyes game.

I had to put Coop in his Hawks outfit and send them a picture to let them know we were cheering for them from here.

Jake, Coop, and I went to dinner at Galloway Saturday night. Jake and I were both craving burgers and they were amazing. I tried to get a picture of how snuggly Cooper was being later that night in bed, but it didn’t really turn out. I never want to forget these moments.

Sunday morning started with a delicious breakfast. We made bacon, sweet potato, hashbrowns, scrambled eggs, and biscuits. Cooper loves eggs and sweet potatoes.

This happy boy sure does love good food like his mom and dad.

If you ever come to our house and wonder why our pillows are messed up…this little girl is the culprit. If there is a blanket, pillow, or article of clothing lying around, she will make a bed on it.

I felt so tired all weekend, so when Cooper laid down for a nap on Sunday, I joined him. I never ended up falling asleep, but it felt good to just relax and cuddle for a little bit.

Once Coop got up from his nap, I got us ready to go run, but he was not about being in the stroller. That never happens, but I wasn’t really in the mood to run, so it worked out. Jake was doing a trail run and I didn’t want to wait for him to get home, so I put Cooper in the ErgoBaby carrier and we walked two miles together. Ya gotta do what ya gotta do!

The faux hawk is here to stay. Everyone tells us Coop looks like Jack-Jack. I guess we have our Halloween costume for next year?

When Jake got home from his trail run, I hopped into the bathtub for some relaxation. Coop’s rubber duckies stared at me.

If meal prep isn’t easy and quick right now, it won’t happen. This is my current go-to – Seeds of Change rice, frozen veggies, and a protein. We are having chicken thighs this week. Once you cook everything, just portion it out into containers. So easy!

This is my first normal day at home in a week. I feel like I have forgotten what our regular routine looks like…ha! Anyone else ever feel that way after you go out of town for an extended period of time? Mondays are usually my busiest days, so I am trying to get some things knocked out. I already got all of my grading finished, so that feels really good. My mom will be over later to watch Coop, so I might go run while she’s here.
