Two recipes for you to try + blowouts & baths + workout run

I made chicken enchilada rice casserole for lunches this week. This meal is delicious and so easy to make. Recipe HERE.

I don’t know how this kid is getting so big. My heart can’t handle it!

Monday evening, we headed to swim. Someone was pretty stoked about his pineapple trunks.

Coop’s favorite part of swim is getting to play with the stackable rings in the water.

He also really loves to pretend to drive.

Dinner Monday night after swim we had the cashew chicken meal. Holy yum. It was amazing! We put the chicken over rice and had veggies on the side. 10/10 recommend.

We have a waffle fanatic on our hands.

I was getting ready to nurse Coop and put him down for a nap when I smelled something terrible. It was everywhere. Every. Where.

So we had a change of plans and got a quick bath. This is the face of someone who loves bath time.

I had an interval workout run yesterday. It was tough. I just felt tired the whole time.

Shorts and a short-sleeved shirt in January? Yes, please!

Most of my meals are eaten on the floor of Coop’s room while he plays. This chicken enchilada casserole is incredible, too.

Jake and his dad worked on some wiring for our current project. It’s going to be so cool.

Coop starts every morning staring out our windows.

Play time after Coop’s breakfast! Mom’s coffee and breakfast is on the floor. We had a baby dance party earlier and Coop is a big fan of Shakira. Ha!
