Spring break + bath time fun + back to running!

I am on spring break this week, so we’re getting lots of mama and Coop time. Not much different from every other week, HA, but I don’t have meetings this week, which is SO nice. Before heading to swim Monday night, we got some Jeep time in. Our neighbors always stop and tell Coop how cool his Jeep is. This is definitely one of his favorite things.

We are still going to swim once a week. My parents are opening their pool this week, so I can’t wait to take Coop to swim. They have a heater, so we’ll be able to use it even if it’s chilly outside.

Night 1 of spring break: wine, The Office, a little grading, and some snacks. I also stayed up past 8:30, so things got pretty rowdy. Ha!

Tuesday morning snack time started with some cottage cheese, which is one of Coop’s favorite foods.

Then we had bath time, another favorite thing! This kid would live in the bathtub if we’d let him.

Pure. Joy.

It was cold and rainy yesterday, so we pretended we were warm and on a beach with Coop’s beach day onesie.

These two watched the rain for a little bit, too.

Lunch was a wrap with honey ham, cheese, and avocado. I didn’t prep lunches this week for us, so I’ve just been grabbing whatever is quick.

Coop took his morning nap in his room, but didn’t want to be put down in the afternoon, so we took an epic couch nap together.

The best snuggles in the whole world.

I hopped on the treadmill yesterday for my hour run. I watched The Office and Coop watched Ms. Rachel until Jake got home from work and then they played and rode bikes. My ankle didn’t bother me at all, so I think we are back in business! So thankful.

I got 6 miles in and have a recovery run today. I have a workout run Thursday, so I’m excited to see how that feels.

I made a new recipe last night for dinner and it was amazing. Brown Sugar Garlic Chicken in the crockpot. I made a massive amount of it and will freeze some. It was so, so good! HERE is the recipe. We put ours on top of rice, and had some cheesy veggies on the side. My favorite hack for chicken in the crockpot – coat it with cornstarch and fry it a little with oil on the stove before putting it in the crockpot. This give the chicken a nice little breading and helps your seasoning/sauce stick better. I just fry mine for about two minutes on each side, so it doesn’t add a ton of prep time to your meals and it really does make all the difference!

Post-dinner playtime before bed.

I always clean up Coop’s big playpen before I go to bed at night. Sometimes I will put his toys in different spots so it looks like they’re playing together. Doing so probably entertains me way too much…
