This lunch is one of my favorites – it’s delicious and so easy to throw together. Rice/quinoa (I use the microwaveable one), veggies (I use frozen), and rotisserie chicken (you can’t beat the $5 one from Sam’s). Top with cheese and some Yum Yum sauce. AMAZING.

My mom watched Coop on Monday while I had a meeting. They played right outside my office window, so I got to wave at them. They were having fun crawling all over these rocks.
We are just waiting to have some more rock delivered for these flower beds in the front, then we’ll also finish landscaping our back patio area later this summer. It’s definitely been a slow process, but we’re just taking our time and getting things knocked out as we can.

Coop is still swimming on Monday nights. He’s getting pretty good at his floats! He still gets mad about keeping his arms straight, so they’re working on that…

Dinner Monday night was ground turkey quesadillas with green beans and salad. Coop ate half the can of green beans.

Before bed Monday, we were walking around the house and Coop spied some of my hats. We wanted to wear this cowboy hat. I love this picture.

Tuesday morning started with a 5am run with Rhea and Kayla! Kayla had to leave before I finished up, so we didn’t get a picture, but it was nice to get my workout knocked out early.

Nothing like hitting 9 miles before 6am. It’s the best feeling.

I was STARVING after my run, so I inhaled three eggs and this bran muffin (my mom made a bunch for us – they’re my favorite.) Coop has also been eating them nonstop…he loves them.

Since we are finished breastfeeding, I am trying to dry up my milk. I have heard that green cabbage can help do that, so here we are! I’ve just been walking around with cabbage leaves in my bra this week…

I was scared he wouldn’t want to cuddle me since we stopped nursing, but he is still just as cuddly! The other day, while he was playing, he stopped all of a sudden and crawled up into my lap for some snuggles. It was so sweet and it made my heart swell.

We also took the most epic nap yesterday.


I think I could eat this lunch every day for the rest of my life.

Coop played in the bathtub a little yesterday. He was all smiles wrapped up in his new whale towel that he got for Easter.

Coop played at my sister’s for a little bit yesterday. She texted me and said he was playing dress-up. As the only grandson, I told her I hoped that meant he was in a dress. She sent me a picture of him in a tutu. HA!

Coop didn’t nap very long yesterday, so was a little sleepy/fussy around dinner time. I decided we both needed some outside time while Jake rode, so we played on our patio. It was perfect. It’s true what they say – playing in water or getting outside can cure most baby (and probably adult) bad moods!



Dinner last night was stuffed chicken breasts from Sam’s with veggies on the side.

I love easy dinners.

Finally got Coop’s clothes organized! I had just been shoving them in random bins, so his closet was a mess. I’ll share a before and after picture once I get these put away. Also, any excuse to use my label maker…I’m in!

We are now in the phase where no matter when he last eaten, he wants whatever is on our plates. So I have just started making extra for every meal. This kid loves his food! Even though he had just had breakfast before this (blueberries, strawberries, banana, and a waffle), he ate some of my eggs and half a waffle.

Sleep is getting better, thank goodness, but we’re still sleepy over here. Hopefully we can all get caught up this week. I have a big run this weekend, so I need to be rested before tackling that. I’m excited! It’s a four hour trail run, so it’ll be tough, but I’m going to run with a friend in AR, so I can’t wait.
