Weekend Wrap-up: family fun night + potty training + I’m sleeeepy

We spent the weekend with a naked Coop working on potty training. He’s doing a really good job, but we’re gonna keep him naked for at least another day or two. It has been fun to see him learn something new, but we’re also so tired from watching him 24/7, ha! He gets so excited after using his potty; it’s adorable!

On Friday, we headed to Eleanor’s family fun night at her school. Coop was ecstatic to see where she goes to school. He talked about it the entire drive over. Here’s his peace sign.

He had the best time playing all the games and winning prizes.

We also snuck outside for some play time on the playground.

Y’all, this granite situation has been something. We had them rip out the first countertop because they messed up the measurements. Long story short, it’s just about finished. We’re waiting on one more piece to be installed and then we can finally move on! I know this isn’t the end of the world by any means, but I’m so ready to have a dang bathroom!

We started potty training on Saturday. Jake tackled most of the first day stuff while I knocked out my weekend to-do list. Teamwork makes the dream work! It has been a long time since I have done a huge meal prep, but that happened on Saturday and even though I was so exhausted afterward, it felt good to get totally prepared for the week. I threw together a Mexican lasagna for us for lunch, too. It was delicious.

I also made a huge batch of breakfast burritos for Jake. I think I made about 2 1/2 weeks worth. I will wrap these in foil and put them in our deep freeze.

I took a small break to snuggle with Coop when he woke up early from his nap. He napped for another hour and a half in my arms. I am soaking up these snuggles any chance I get.

I made two quiches, one for this week and one to freeze. They did not turn out very pretty, but they are so good. Cooper loves them too.

Lunches this week are Mediterranean bowls. These have quinoa, chickpeas, cherry tomatoes, cucumbers, feta cheese, and I put Kalamata olives in Jake’s. I would normally put chicken in these, but chicken has not sounded good to me this entire pregnancy, so we are sticking with veggies. I also made Taziki sauce to go with them and we’ll have pita bread.

Jake’s Nanny came over for dinner Saturday night, so I made another one of our favorite quick meals – crescent roll Mexican pizza. So good and so easy.

Our boys have the best Daddy.

Sunday morning snuggles with this big boy. He wiped out on our patio Saturday evening and skinned his knees. Bruises and scrapes are a constant around here!

I had every intention of being productive Sunday during Coop’s nap, but then I got suuuuuper tired, so I decided to nap with him. Thennnn baby brother decided to put on a circus act and I couldn’t sleep, so I just snuggled Coop and relaxed.
