Potty training update + cluttered brain & desk + goof

Potty training is going pretty well! We are moving to the next phase today – pants. This kid was very proud of this poop. Don’t worry, I’ve hidden everything the public didn’t need/want to see, ha!

Aaaaand this is why I am not meal prepping for myself right now. Lunch time rolled around and all the food I had made sounded awful, so I stuck with chips and melted cheese. Plus a sweet tea. That’s all I want right now!

It’s the end of the semester, AND the first time I will be taking a summer off work since I was a sophomore in college. I don’t know what to do with myself! I’m trying to get everything wrapped up so all I have to do is occasionally check email during my leave. Since I advise students, I’ll still need to be available, but I’ll only be doing that every few days. I’m currently working on finishing up building a new course we’re offering, processing student graduation applications, and interviewing for a position we’re hiring. Plus my regular duties. I think the inside of my brain probably looks as cluttered as my desk.

We aren’t supposed to go anywhere right now during this potty training phase, but Cooper’s favorite thing in the world is his swim lesson, so I wasn’t going to have him miss it. He had the best time. It’s so cool getting to see him learn how to swim. We can’t wait to take him to the pool this summer.

Our next fun adventure is butterflies! Our caterpillars came on Monday. Coop is obsessed with them. He wants to tell them good morning the second he wakes up.

Coop woke up early from his nap yesterday, so I held him while he snoozed. I love these snuggles so much. he napped another two hours in my arms.

If I can make a dinner under 20 minutes, I’m a happy girl. This is one of our faves. Teriyaki beef and broccoli. I usually put it over sticky rice, but we had a bunch of leftover quinoa, so I used that instead. It was delicious and Coop loved it. I just used Cavender’s seasoning on the broccoli and garlic powder and coconut aminos on the ground beef. So quick and easy!

When you get some m&ms after dinner and that sugar high hits…HA!
