Anyone else love Mondays that fall on the beginning of a new month? I do! We had kind of a hard-ish day (scroll to the very bottom for an update), but most of my day was pretty great – I went to a doctor’s appointment, then the gym, then had the most delicious breakfast – casserole and avocado toast.
If I am working in the office, these two are on my rug. I spent most of Monday working. I got SO much accomplished, so that felt really good. Jake’s weekends right now are Tuesdays and Wednesdays, so I try to get some of my stuff done early in the week so we can spend some time together on those days.
I wore this tank to the gym and craved a margarita the rest of the day. This shirt says, “If you’re going to be salty, bring the tequila”. Jake’s Mom got it for me and it’s one of my favorites.
I threw together some burritos for lunches this week. These have a bunch of random leftovers that were in our fridge – black beans, chicken, Beyond Meat ground beef, diced tomatoes, and green chilis. I mixed everything together and threw the mixture in some tortillas, topped them with cheese, and baked at 350 for 20 minutes. So easy and so delicious. I think the burritos are just about as big as my head…that’s how you know they’re good.
After lunch, I told Jake I was going into my office to work. Soon after, I had visitors.
Jake fell asleep for a couple minutes. I HAD to take a picture. Rhea was in Heaven.
I didn’t run Monday morning, so I put it off until right before dinner. I didn’t feel like being cold and I love my treadmill, so I hopped on and knocked out three easy miles while watching Grey’s.
Dinner was leftover chickpea lettuce wraps – YUM. These were somehow even better the second time. We will 100% have these again.
Lu always sleep with her neck in the strangest positions. It hurts me to look at this.
This cracked me up. Our doorbell camera captured this image of a bird at our front door yesterday. HA! It almost looks fake.
I started my Tuesday with 7 miles and these babes. Knowing I get to run with friends definitely helps motivate me to get up early. Plus, Rhea would be livid if she missed a run with these two.
