Yesterday started with some computer work at home before I decided to go to the library for a couple of hours. I was trying to get some stuff done while lounging in bed (AKA being lazy), but the girls just thought I was there to cuddle.

I love having this breakfast casserole ready to just heat up in the mornings! It’s SO easy. You just throw whatever veggies/meat you want in a crockpot, add 2ish cups of coconut milk, 12-14 eggs, and cook it on high for 3/4 hours or low overnights. It’s the best!
